240 ml of strong brewed coffee or espresso, cooled to room temperature

3 tablespoons coffee liqueur (e.g., Kahlúa) (optional)

3 large egg yolks

1/2 cup (100g) granulated sugar

225g mascarpone cheese, softened

1 cup (240 ml) heavy cream

1 teaspoon of pure vanilla extract

24-30 ladyfinger cookies (savoiardi)

Unsweetened cocoa powder, for dusting

Chocolate shavings or grated chocolate for garnish (optional)

Instructions:

In a shallow dish, combine the brewed coffee or espresso with the coffee liqueur (if using). Set it aside to cool. 

In a large mixing bowl, whisk the egg yolks and sugar together until pale and creamy. 

Add the softened mascarpone cheese to the egg yolk mixture and beat until smooth and well combined. 

In a separate mixing bowl, whip the heavy cream and vanilla extract until stiff peaks form. 

Gently fold the whipped cream into the mascarpone mixture until fully incorporated. Be careful not to deflate the whipped cream.
