North India is the hub of street food. From Dahi Bhalla to Chole Bhature, the region offers everything to satiate everyone's food cravings. Chana/ Chole is an integral part of North Indian cuisine. The North Indian street food is greatly inspired by the mix and match of different dishes like aloo Tikki with chole, Samose chole, bharva golgappe with chana etc. One such dish is the masala chole burger. This dish ditches the usual basic aloo patty and uses boiled chole/matar as its stuffing. The boiled chole is mixed with chopped onions, tomatoes, spices and chutneys. The burger is then cooked on a tawa to give it a desi touch. This street-style burger is quite famous in Delhi and Himachal Pradesh. You will find its stalls almost everywhere in North India. It is a delectable and lip-smacking desi burger that oozes out all the desi flavours of chole, imli chutney, shallow fried burger buns and authentic desi spices. Street foods aren't always healthy. To prepare Chole Masala

Mix all the ingredients for the masala with boiled chole/matar. You can adjust the spices according to your taste. Make sure the chole are boiled and don't have too much water content as it will make the stuffing a little runny.

Prepare The Burger Buns

Slit the burger buns in a way that there is an opening at one end and the other end is closed and intact (like a pocket). Grease them with some oil or butter and cook until they get golden brown.

Stuffing the masala

Now, stuff the chole masala in the burger buns carefully. Make sure you don't overstuff it. After stuffing, add some sev, mint leaves, coriander leaves and chopped onions to it. Pour some lemon juice and serve hot.
