The traditional Indian ‘chole’ depicts the perfect lunching scenes. Served with rice and Indian bread, chole or chickpea curry is the trademark Punjabi recipe that has taken the essence of Indian cuisine beyond boundaries. Looking at the various health benefits chole has, there is no basis for skipping it from your diet. A rich source of fibre, vitamins, and proteins, chickpea is a boon for people who have diabetes. Chickpea Slaw 

Ingredients 

  • 1/2 Kg boiled chickpeas 
  • One teaspoon of powdered cumin seeds 
  • A pinch of paprika 
  • A handful of coriander and mint leaves 
  • One chopped capsicum and onion 
  • 1/2 cup of corn cobs 
  • One avocado 
  • 1/2 cup of crumbled feta cheese 
  • One tablespoon of lime juice 
  • 1/2 tbsp of black pepper 
  • One spoon of apple cider vinegar with salt 

Method 

  1. In a bowl, mix veggies with chickpeas 
  2. Stir all the ingredients thoroughly 
  3. Now add feta cheese (crumbled) 
  4. Spatter a bit of salt and black pepper 
  5. Add a drop of lime juice and vinegar 
  6. If you prefer, you can serve it fresh or let your salad freeze.

Chole

Ingredients 

  • 1/2 Kg boiled chickpeas 
  • One teaspoon of powdered cumin seeds 
  • A pinch of paprika 
  • A handful of coriander and mint leaves 
  • 5 to 6 garlic cloves 
  • 1/2 piece of ginger 
  • One chopped capsicum and onion 
  • Two chopped tomatoes 
  • One tablespoon of lime juice 
  • 1/2 tbsp of turmeric, coriander powder and black pepper 
  • One teaspoon of apple cider vinegar and salt

Method  

  1. Warm oil in a container and add cumin seeds. Once they begin popping, add onions and tomatoes. 
  2. Toss them well till tomatoes ooze out their juices and onions turn golden. 
  3. Add all the seasonings and stir till you have a golden paste. 
  4. Add a pinch of sugar to enhance flavours. 
  5. Now with stalk, add the boiled chickpeas and let it seethe for a while. 
  6. Once it’s ready (cooked), sprinkle chopped coriander leaves and serve with flatbreads or steamed rice.

Hummus

Ingredients 

  • 1/2 Kg boiled chickpeas 
  • Four tablespoons of roasted sesame seeds 
  • One tablespoon of lime juice 
  • Six tablespoons of olive oil 
  • 1/2 tbsp of black pepper 
  • One teaspoon of salt 
  • 5 to 6 garlic cloves 
  • 1/2 piece of ginger

Method 

  1. Add garlic cloves with ginger and chickpeas. Blend them for 15 secs in a blender. 
  2. Once the mixture is set, take it out in a container. 
  3. Sprinkle paprika from the top and drop a few drops of olive oil.
