Chef Rahul Khare’s Authentic Italian Delights

Italian is one of the most relished global cuisines in India. Pizzas, pastas and risottos have already found a permanent place on our dining table. Be it a pasta ordered from the restaurant to the pizza made in the oven at home, we are truly obsessed with Italian cuisine. We have also given the authentic dishes from Italy a desi touch by adding some local ingredients. But did you think pizza, pasta, and risotto are the only Italian dishes that can be included in our meals? This cuisine holds other delectable dishes as well that can tickle your taste buds.  

The Finch, Mumbai is all ready to host a month-long Italian fest that will offer a variety of authentic local delicacies from all around Italy, taking the food lovers on a culinary tour of Italian streets. One can appease their taste buds with the lip-smacking recipes such as soups like Sicilian fish stew and healthy salads like Amalfi salad. Flavourful starters like Fungi Misti Bruschetta, Frito Misto and Shitake Arancini will ensure you taste the authentic flavours of Italy and so on.  

Chef Rahul Khare, from The Finch, has brought to you some of his delectable Italian recipes that he will be presenting at the Italian Fest:  

1. Creamy Pannacotta  


Ingredients:  

  • 110 pannacotta batch   
  • 15 gm blueberry compote   
  • 20 gm almond crumble   
  • 2 gm mint  

Method:  

  • Demould the pannacotta in the plate.  
  • Sprinkle the almond crumble around it.  
  • Add the blueberry compote on top.  

2. Roasted Balsamic Heritage Salad  

Ingredients:  

  • 100 gm balsamic roasted vegetable   
  • 1 gm picked mint   
  • 2 gm radish slices   
  • 20 gm iceberg lettuce   
  • 20 gm romaine lettuce  
  • 5 gm balsamic vinaigrette  
  • 10 gm roasted cherry tomatoes   
  • 2 gm pomegranate seeds  

Method:  

  • Take the portion of the roasted vegetable batch.  
  • Take lettuce in the mixing bowl and drop the roasted veggies in it.  
  • Toss it with the balsamic vinaigrette.  
  • Roasted cherry tomatoes.  
  • Give a nice height to the salad and garnish it with pomegranate seeds on top.  

3. Frito Misto  


Ingredients:  

  • 50 gm prawns       
  • 50 gm bassa fish   
  • 30 gm salmon fish   
  • 30 gm squid  
  • 2 gm fried parsley  
  • 3 gm scratching rub   
  • 50 gm flour   
  • 30 gm cornflour   
  • 10 gm lemon   
  • 100 gm frying oil   
  • 3 gm salt   
  • 2 gm pepper   

Method:  

  • Keep the oil for heating.  
  • Take all the seafood in the mixing bowl and season it.  
  • Then add the flour to it coat it nicely.  
  • Drop in the oil for frying cook it till it becomes golden brown and crispy.  
  • Remove in the mixing bowl and sprinkle the scratching rum mix on top and toss it.  
  • Arrange it in the plate.  
  • Garnish with chop parsley and lemon wedges.  
  • Serve with the garlic aioli.  

4. Shitake Arancini  

Ingredients:  

  • 4 gm shitake arancini balls   
  • 40 gm mushroom blend sauce   
  • 3 gm fried thyme   
  • 2 gm fried garlic  
  • 8 gm grated parmesan cheese  

Method:  

  • Drop the coated arancini balls in the fryer.  
  • Cook it till it becomes golden brown.  
  • Spread the mushroom blend sauce in the bottom of the plate.  
  • Thinley slice the garlic and crispy fry it.  
  • Cut one arancini ball in half and arrange it on the sauce.  
  • Sprinkle the grated parmesan cheese sauce on the top.  
  • Garnish with the parsley tips.  

5. Pollo Ala Cacciatore  


Ingredients:  

  • 200 gm chicken breast boneless   
  • 10 gm herb marination   
  • 150 gm cacciatore sauce   
  • 2 garlic bread   
  • 20 gm house salad   
  • 6 gm parmesan cheese  
  • 2 gm salt   
  • 1 gm pepper   
  • 2 gm lemon juice   
  • 30 gm roasted baby potato  

Method:  

  • Marinate the chicken breast with the herb marination and keep it aside.  
  • Put the chicken on the grill and cook it.  
  • Toast the garlic bread under salamander.  
  • Heat the batch of the Cacciatore sauce in the pan.  
  • Sauté the roasted potato in the pan with garlic bread and seasoning.  
  • Arrange it the plate and serve.
