Celebrate Italian Cuisine Week 2022 With This Recipe

Italian cuisine is oved by each and everyone. It is one such cuisine where you do not just have one favourite, you have many and you love all of those dishes equally. If one cuisine has been able to break the barrier of being internationally popular almost everywhere, it indeed is Italian. From pasta to pizza – people all over the world have not only loved and accepted the cuisine as a part of their diet and a part of their hearts. It is a cuisine which genuinely makes you fall in love with itself and with food in general.

With the advent of Italian Cuisine Week 2022, not only can we eat all our favourite dishes to celebrate, we can also try out new recipe as an ode to this amazing cuisine. So, for foodies who want to experiment but with the right amount of familiarity in the dishes, here is a Spaghetti in All-Purpose Tomato Sauce with Fresh Burrata recipe by Chef Aabhas Mehrotra, an Executive Chef at Sorrentina.

Ingredients 
  • 1 portion, Sorrentina’s Spaghetti
  • 1portion, Sorrentina’s All-Purpose Tomato Sauce 10ml, Olive Oil
  • 20gms, Cherry Tomatoes, Halved 
  • 5gms, Garlic, Chopped 
  • 5gms, Basil Leaves 
  • 5gms, Butter 
  • 50ml, Water or Vegetable Stock 

Method 

  • Blanch Sorrentina’s Spaghetti for 1 minute in a pot of boiling water. Cook it the rest of the way through in the Tomato Sauce.
  • In a pan, add Olive oil and chopped Garlic and let it caramelize
  • Add the halved Cherry Tomatoes and allow them to blister 
  • Add the Stock, Basil Leaves and season with Salt 
  • Add in Sorrentina’s All-Purpose Tomato Sauce and allow it to emulsify 
  • Add the Spaghetti to the Tomato Sauce and let it cook for 2 minutes 
  • Once the Tomato Sauce is thick, add butter and let the pasta emulsify 
  • Plate the pasta and pour the excess chunky Tomato Sauce on top
  • Cut open a fresh Burrata and place it on the pasta just before serving. When the Cream mixes with the Tomato Sauce, it will settle into a nice blush hue
  • Chili can be added at the end, for an element of spice.
