Chef Kunal Kapur’s Nutri Kulcha From The Streets Of Amritsar

There is no denying the fact that Punjabis are the true gourmets and the Amritsari street food is the best in the country. Though Amritsar is famous for a plethora of non-vegetarian dishes, especially the meat kulcha, there is something for vegetarians too which is equally loved and popular. We are talking about the city’s favourite nutri kulcha which usually remains an ultimate destination for a foodie. Nutri or soya chunks are not only high in proteins but also mimic meat, making it best for vegetarians. And why not? Why should non-vegetarians have all the fun?

One more time, he has brought us the ultimate taste from the streets of Amritsar through the amazing nutri kulcha. He has shared the recipe on his Instagram handle and we have brought it for you. Amritsari Nutri Kulcha

Serves - 4

Ingredients

For Boiling Nutri

  • ½ cup Nutri Nugget
  • ½ cup Nutri Keema  
  • 2 lt Water  
  • 1 tsp Salt  
  • 2 green Chilies 
  • 2 tbsp ginger

For Nutri Masala

  • 1 bayleaf
  • 2 dry red chilies
  • 3 tbsp coriander seeds
  • 1 ½ cumin
  • 2 cinnamons
  • 2 black cardamoms
  • ¼ nutmeg
  • 1 mace
  • 4 green cardamoms
  • 4 cloves
  • 5 black peppers
  • 3 tbsp anardana
  • 2 tsp ajwain
  • 2 tsp kasoori methi powder
  • 2 ½ tbsp amchur powder

For Cooking

  • 3 tbsp ghee/oil
  • ½ tsp Heng
  • 1 cup onion (chopped) 
  • 1 tsp ginger garlic paste  
  • Dash of water
  • 1 tsp green chilies (chopped)
  • ¼ cup capsicum (chopped)
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 3 tsp nutri garam masala
  • 2 cups fresh tomato puree
  • 1 tsp black salt
  • Salt to taste
  • Pinch of kasoori methi
  • 3 cups water  
  • Handful of coriander

For Masala Kulcha

  • 2 tbsp butter
  • 8 kulcha  

Method

  • Soak nutri nuggets and nutri keema in water for some time 
  • Take a pan, add water, and soaked nutri nuggets and keema 
  • Also, add slit green chilies and ginger to enhance the flavour 
  • Let it boil for 5 minutes 
  • Meanwhile, take a pan on low to medium flame 
  • Add bayleaf, dry red chilies, cumin, coriander seeds, cinnamon, black cardamom, nutmeg, and mace 
  • Also add green cardamom, cloves, and black pepper
  • Roast the spices until they turn a little brown 
  • Once done, turn off the flame and let them cool 
  • Take a mixer jar and add all the roasted spices 
  • Grind them and take them out 
  • Now add kasoori methi and anardana 
  • Mix and nutri masala is ready (Note: don’t add kasoori methi while roasting the spices as it will burn) 
  • Now, turn off the flame for nutri keema and nuggets 
  • Take out the nutri nuggets and keema and strain the water out of them completely 
  • Take an iron deep bottom pan and add ghee or oil 
  • Add heeng and chopped onion 
  • Add ginger garlic paste and a dash of water 
  • Add chopped green chilies and chopped capsicum 
  • Add turmeric powder, chili powder, and 3 tsp of nutri garam masala 
  • Roast for some time 
  • Now, add tomato puree and let it cook 
  • Add black salt and salt 
  • Add a pinch of kasoori methi and mix 
  • Add water and cook until the oil oozes out 
  • Garnish with coriander 
  • Take another pan and add butter 
  • Put the kulcha on it 
  • Serve hot
