Chef Ashish Singh Shares Mango-Based Snack Recipes

The summer season is all about experimenting with the ‘King of fruits’, mango. While you must have already tried the regional recipes and made aam achaar or have had glasses of aam panna, you can also add mangoes to your all-time favourite dishes. Whether it’s pizza or quesadilla, you can give your Italian and Mexican staples a mango twist with these easy recipes. 

Specially curated by Chef Ashish Singh from Cafe Delhi Heights, here are some step-by-step recipes that require minimal ingredients and are also super easy to follow. So, what are you waiting for? Chop some mangoes and cook the summer special snacks.

Mango Quesadilla

Ingredients:

  • Tortilla – 2 pcs
  • Mango (Ripe, sliced) – 200 g
  • Mixed Bell Peppers (Green, Yellow, Red – chopped) – 120 g
  • Cheddar Cheese – 80 g
  • Cajun Spice – 10 g
  • Jalapeño (sliced) – 30 g
  • Onion (chopped) – 40 g
  • Tomato (chopped) – 50 g
  • Tomato Ketchup – 20 g
  • Tabasco Sauce – 5 ml
  • Fresh Coriander (chopped) – 10 g
  • Lemon Juice – 10 g
  • Avocado – 50 g
  • Cooking Cream – 30 ml
  • Garlic (minced) – 30 g
  • Salt – 5 g

Instructions:

  1. In a pan, heat a little oil and sauté chopped capsicum, onion, tomato, and garlic. Add Cajun spice and cook for 3–4 minutes until soft and fragrant. Set aside.
  2. In a bowl, mash the avocado with lemon juice, Tabasco, salt, and a bit of cooking cream until smooth. 
  3. Add fresh coriander for a burst of freshness. Keep chilled until serving.
  4. On one tortilla, layer the sautéed vegetables, ripe mango slices, sliced jalapeños, and grated cheddar cheese. Place the second tortilla on top to form a sandwich.
  5. Heat a non-stick pan or skillet over medium heat. Toast the quesadilla on both sides until golden brown and crispy, and the cheese has melted—about 2–3 minutes per side.
  6. Cut into wedges and serve hot with the chilled avocado dip on the side.
  7. Garnish with extra coriander or a drizzle of tomato ketchup for added zing.

Mangolicious Pizza

Ingredients:

  • Pizza Base – 1 (store-bought or homemade)
  • Mozzarella; Cheddar Cheese (grated) – 120g
  • Ripe Mango (peeled and sliced thin) – 200g
  • Rocket Lettuce (arugula) – 100g
  • Olive Oil (for garnish) – 10ml
  • Black Pepper (freshly cracked) – 5g

For the Tomato Sauce:

  • Peeled Tomatoes – 80g
  • Tomato Puree – 40g
  • Olive Oil – 100ml
  • Fresh Basil Leaves – 10g
  • Leek (chopped) – 5g
  • Celery (chopped) – 5g
  • Garlic (chopped or minced) – 30g

Instructions:

  1. In a blender, combine peeled tomatoes, tomato puree, garlic, basil, leek, and celery. Blend into a smooth, aromatic sauce. 
  2. Heat a bit of olive oil in a pan and simmer the blended sauce for 5–7 minutes to enhance the flavours. Set aside to cool slightly.
  3. Preheat your oven to 200°C. Place the pizza base on a baking tray or pizza stone.
  4. Spread a generous layer of the freshly prepared tomato sauce evenly over the base.
  5. Sprinkle the mozzarella and cheddar cheese over the sauce, covering the base evenly. Then, arrange the thin mango slices artistically across the pizza for a burst of sweet flavour in every bite.
  6. Bake the pizza in the preheated oven for about 12–15 minutes, or until the crust turns golden brown and the cheese is melted and bubbly.
  7. Once baked, top the hot pizza with a generous handful of fresh rocket lettuce. 
  8. Finish with a light drizzle of olive oil and a sprinkle of freshly cracked black pepper for a peppery kick.
