Almond Mango Cake With Mango Cheese Cream (Gluten-free cake)

Ingredients:

For Cake:

  • 200 g butter
  • 200 g almond powder
  • 200 g sugar
  • 4 eggs
  • 80 g mango purée
  • 2 ml vanilla essence

For Cheese Base:

  • 100 g cream cheese
  • 50 g mango purée
  • 20 g whipped cream

Instructions:

  1. Cream the butter and sugar until light and fluffy.
  2. Add the eggs one at a time, beating well after each addition.
  3. Fold the almond powder, then add the vanilla essence and mango purée.
  4. Pour the mixture into a mould and bake at 180°C for 15 to 20 minutes.
  5. Once baked, allow the cake to cool to room temperature.
  6. Mix cream cheese, mango purée, and whipped cream in a separate bowl until a thick cream forms.
  7. Pipe the cream mixture onto the cooled cakes.
  8. Top with Alphonso mango chunks and serve.

Chilli Mango Brownie Pudding

Ingredients:

  • 200 g mango purée with chunks
  • 200 g sugar
  • 2 g basil (chopped)
  • 150 g brownie cubes
  • 5 g agar agar
  • 30 g mango cubes

Instructions:

  1. Take fresh, well-ripened mangoes and extract the pulp.
  2. Mix the pulp with sugar and let it chill in the refrigerator.
  3. Dissolve agar agar in a little water and fold it into the mango purée.
  4. Pour the mixture into serving glasses and set them in the refrigerator to chill.
  5. Cut homemade brownies into cubes.
  6. Once the mango layer is set, remove the glasses and add brownie cubes to one side.
  7. Place the glasses back in the refrigerator to firm up further.
  8. Cut the mango into small cubes and arrange them on the glasses.
  9. Serve chilled to kids and guests.

Fresh Mango On Chocolate Disk With Mascarpone Cream Filling

Ingredients:

  • 3 fresh sweet mangoes (cubed)
  • 500 g mascarpone cream
  • 100 g sugar
  • 200 g of chocolate

Instructions:

  1. Melt the chocolate and spread it into round disks (as shown in the reference image). Allow to set.
  2. Prepare the mascarpone cream by mixing the mascarpone cheese with sugar until smooth and creamy.
  3. Pipe a layer of mascarpone cream onto each chocolate disk.
  4. Arrange cubed mango pieces over the cream.
  5. Repeat this process to form three layers (disk, cream, mango).
  6. Garnish with chocolate shards and fresh fruits before serving.
