Healthy Mango Ice Cream By Chef Sneha Singhi
Ingredients:
- 1 cup rolled oats
- 1/4 cup almonds, soaked & peeled
- 1/4 cup cashews, soaked
- 10-12 dates, deseeded
- 1 cup milk (dairy or non-dairy)
- 2 mangoes
Instructions:
- Soak the oats, almonds, cashews & dates in hot milk & keep aside for 10-15 minutes. Blitz it with the mango till it’s smooth & creamy.
- Transfer to a container & tap it to remove any air bubbles.
- Cover with a cling wrap, touching the top to avoid forming ice crystals & freeze it overnight.
- Keep the ice cream at room temperature for 10-15 minutes before serving.
- Scoop it out into bowls or cones.
- Top it up with more chopped mangoes & dig in.
Mango And Passion Fruit Chia Pudding By Justbe By Nidhi Nahata, Bengaluru
Ingredients:
- 1 cup of fresh mango pulp
- 1/2 cup thick coconut milk (freshly squeezed or canned, free of additives)
- 2 tbsp per serving of chia seeds
- 1 tablespoon date syrup or small chopped soft dates.
- 2 tablespoons fresh passionfruit pulp
- Cardamom, grated (optional)
- Garnish: mint leaves, edible flowers.
Instructions:
- Combine chia seeds, date syrup, coconut milk, and mango pulp in a bowl. Stir vigorously.
- Cover and refrigerate for 3–4 hours or overnight, except once in the middle, stirring every half hour.
- Top with fresh passionfruit pulp just before serving. Add edible flowers, if desired.
- Chill in glass jars or half coconut shells to give an exotic touch.
