Chefs Share Cool Mango Recipes You Must Try This Summer

When summer hits, mangoes take centre stage. Also known as the “king of fruits,” mangoes are much more than a juicy ingredient that can naturally add sweetness to your desserts and drinks. Whether you grew up savouring fresh and juicy slices or blending the pulp into thick mango shakes, the golden fruit is rightly synonymous with summer indulgence.

However, if you want to try something beyond desserts, like mango ice cream or beverages other than a mango smoothie, this is just the right article for you. Fusing the best of flavours, here are some summer special recipes curated by chefs that you can try recreating at home.

Mango Green Tea Popsicles By Gagana Manjunath, Bartendress At Shangri-La Bengaluru

Ingredients:

Green Tea Layer:

  • 1 tsp Matcha Green Tea Powder
  • ⅔ cup Full-Fat Coconut Milk (or light)
  • 1–1.5 tsp Maple Syrup, agave, or honey

Mango Layer:

  • 1 cup Fresh Mango, cubed (preferably Alphonso or Badami)
  • ¼ cup Light Coconut Milk (or full-fat)
  • Juice of ½ Medium Lemon

Instructions:

  1. Decide which layer you want as the top — vibrant mango or zen green tea. Start with that blend.
  2. Blend Green Tea Layer In a blender, combine matcha, coconut milk, and sweetener. Blend until silky. 
  3. Pour into popsicle moulds, filling halfway. Freeze for 30 minutes to set slightly.
  4. Blend fresh mango chunks with coconut milk and lemon juice until smooth. Pour over the set green tea layer.
  5. Insert popsicle sticks and freeze for at least 4 hours, or overnight for best results.

Mango Lime Kombucha Margarita By Chef Hemant Kumar, Executive Chef, 2 Moons

Ingredients:

  • 1/3 cup fresh or frozen (thawed) mango chunks
  • 1 tablespoon fresh lime juice
  • 1 ounce tequila (blanco or silver recommended)
  • 1 teaspoon honey or agave syrup (adjust to your sweetness preference; you might not need any depending on your mango and kombucha)
  • 3 ounces mango-flavoured kombucha (plain or citrus kombucha can also work)
  • Ice as required
  • Optional: Salt or sugar for rimming the glass
  • Optional garnishes: Lime wedge, mango slice, mint sprig

Instructions:

  1. If you'd like a salted or sugared rim, rub a lime wedge around the rim of your glass. 
  2. On a small plate, spread some salt or sugar, and gently press the rim of the glass into it. Fill the glass with ice.
  3. In a blender or cocktail shaker, combine the mango chunks, lime juice, tequila, and honey/agave (if using).
  4. Add a handful of ice and blend until smooth. Add ice and shake well until chilled.
  5. Pour the blended or shaken mixture into your prepared glass over the ice.
  6. Top the drink with the mango kombucha. If you shook it, you can gently stir it in.
  7. Add a lime wedge, mango slice, and/or a sprig of mint for garnish, if desired. Serve immediately and enjoy!

Mango Margarita By Gagana Manjunath, Bartendress at Shangri-La Bengaluru

Ingredients:

  • 60 ml Tequila
  • 30 ml Cointreau
  • 45 ml mango purée (mango blended with a touch of honey)
  • 15 ml fresh lime juice
  • A dash of agave syrup (optional)
  • Ice cubes (as needed)

For Garnish:

  • Fresh mint sprig
  • Thin raw mango slices or cubes
  • Chilli or salt rim (optional)

Instructions:

  1. Rim your margarita glass with salt or Tajín for an extra kick.
  2. In a blender, combine tequila, Cointreau, green mango purée, lime juice, agave syrup, and a generous scoop of ice.
  3. Blend until slushy smooth. 
  4. Pour into a chilled margarita or coupe glass.
  5. Garnish with a fresh mint sprig and raw mango pieces.
