Cheesy Egg-Stuffed Peppers & Breakfast Burrito: Low-Carb Recipes

When it comes to diet management, carbs often get a villainous reputation. But complex carbs are not just good, but essential for the body. These are found in whole grains, fruits, vegetables, and other starches and fibres. Similarly, protein rich foods are also important to your meal plan if you are going on a diet. Protein digests slowly, which keeps you feeling satisfied for longer hours and you consume fewer calories in the day. Lean beef, chicken, salmon, peanut butter, and eggs are some of the popular foods rich in protein. 

In today’s recipes, we have the ultra-delicious Cheesy Egg-Stuffed Peppers and buzzworthy breakfast burritos that are just as delicious as they are appetising. 

Cheesy Egg-Stuffed Peppers

It is one of many delectable versions of the stuffed capsicum dish popular across the globe. The dish involves a two step-process: a well-cooked veggies filling that involves finely chopped onions, green chillies, garlic, tomatoes, boiled potatoes, paneer (cottage cheese), and other diet-friendly ingredients.

Once the filling cools down, it is stuffed into a bell pepper cup, garnished with some mozzarella on top and baked in the oven to bake for 10 to 20 minutes. You can also replace the bell peppers for tomatoes and apply the same cooking method for another variation of this diet-friendly breakfast. Here’s the recipe.

Ingredients:

  • 3 capsicums
  • 3 tbsp mozzarella cheese
  • coriander leaves
  • 1 tsp oregano
  • ½ tsp red chilli powder
  • 1 tbsp red chilli sauce
  • ½ tsp sugar
  • 1 boiled potato (chopped)
  • 100 gms paneer (chopped)
  • 1 tomato (chopped)
  • 1 green chilli (finely chopped)
  • 1 tbsp garlic (finely chopped)

Method:

For the capsicum filling:

  • Heat some oil in a pan, and add the chopped onions. Let them cook for a few seconds.
  • Add garlic, green chillies, deseeded tomatoes, boiled potatoes, paneer, black olives, all finely chopped. 
  • Add red chilli powder and red chilli sauce, finely chopped coriander leaves, dried oregano, sugar and salt. 
  • Mix all the ingredients well on a medium flame. 
  • Put off the flame and let it cool down for five minutes.
  • Once the filling cools down, add grated mozzarella cheese and mix it well with the filling. 

For the stuffed capsicum:

  • Use medium-sized capsicums. 
  • Chop the capsicum into half, and then deseed it to make nice cups of capsicum.
  • Fill the capsicum cups with the filling. The filling should be at the level of the capsicum.
  • Garnish it with grated mozzarella cheese.
  • Place the capsicums on a baking tray and bake them at 180 degrees Celsius for about 10-15 minutes.

Greatest Breakfast Burrito

Burritos are a perfect dish for picky eaters, because you can just take all of their favourite ingredients and wrap them in a tortilla to create the perfect breakfast burrito. Naturally, you’d have to avoid simple carbs if you are on a diet. Still, there are a variety of delicious options in meats and vegetables offered by mother earth for that burrito filling. This recipe for a creamy, low-calorie burrito can be cooked in less than 15 mins.

Ingredients:

  • 2 tortillas
  • 200 gms ground meat (5% fat)
  • 1 onion
  • 100 gms tomato sauce
  • 2 garlic cloves
  • 30 gms fat reduced gouda

Method:

  • Take two 2-inch protein tortillas. 
  • For the base of the vegetables, take an onion and dice it into small chunks, followed by two cloves of garlic pressed. 
  • For the sauce, you can either take pre-made tomato sauce or make it from scratch with tomatoes blended in a mixer, and seasoned with salt and oregano.
  • For the cheese, take some shredded mozzarella or a cube of cream cheese. 
  • Heat the pan on high flame with a touch of olive oil.
  • As soon as the pan is hot, add the grounded meat and immediately start mixing it with a spatula. 
  • Add slate to taste and some black pepper. 
  • If the meat is extra lean it will dry out fairly quickly, so keep stirring the meat
  • After a minute of stirring, add onions and cook it for another two minutes until the onions start to catch a golden brown colour. 
  • Add the garlic pisces, and cook them for half a minute max.
  • Add 3 tablespoons or 300 gms of tomato sauce and stir the mixture well. 
  • Add the cube of cream cheese and keep stirring. 
  • If you want to top it by a notch, add shredded cheese for the added flavour.
  • For the wraps, you can either microwave them at medium high temperature or heat them at 230 degree Celsius. 
  • Now for assembling the whole dish, split the meaty mixture in two halves, and spread the meat evenly on each tortilla, and roll it slowly into a nice looking burrito.

When you are on a diet, the carbs you need to watch out for are simple carbs. These are the ones that get absorbed into the bloodstream, and become blood sugar. Some foods which contain simple carbs are bread, refined pasta and dough, White rice, and pastries. So, when you are making a meal, look at what kind of carbs you are consuming.
