Celebrate A Sumptuous Eid Feast With Rogan Josh And Sheermal

To mark the auspicious day, The Westin Kolkata Rajarhat has curated a special Eid brunch menu at its all-day dining restaurant, Seasonal Tastes, for the patrons to celebrate the day without missing out on delectable dishes. 

 A fine dining destination, Seasonal Tastes is best known for its expertise in authentic world cuisine and on this holy day, it is turning its attention to celebrating Eid by offering a specially curated lavish meal by the expert in-house chefs. The appetizing brunch buffet will feature a wide array of vegetarian and non-vegetarian specialities to choose from. Here is two exclusive recipes by Executive Chef, Vivek Kalia

Mutton Rogan Josh

Ingredients:- 

    1 Kg meat

    1 cup mustard/refined oil

    3 tsp red chili powder

    3 tsp fennel powder

    2 tsp ginger powder

    2 tsp cumin powder

    3 tsp brown cardamom powder

    1 tsp asafetida

    4 Green cardamom

    2 Cinnamon sticks

    2 Bay leaves

    2 Cloves

    1/3 tsp saffron (optional)

    1 cup curd

    A pinch of salt

 Method

1.Wash the meat properly. Heat oil in a handi.

2.Put cinnamon, bay leaves, green cardamom, cloves, a teaspoon of salt, asafetida, and meat together.

3.Fry meat till it turns brown. Once browned, pour a cup of water.

4.Add the red chili powder and saffron into the meat. Keep stirring for about a minute.

5. Mix the curd nicely in the mixer and pour it into the handi.

6. Keep on stirring till you get a reddish tinge.

7. Add 2 cups of water, fennel powder, ginger powder, and cook until meat gets soft.

8.Check if the meat is tender. Peel and grind green and brown cardamom and add to the meat dish.

9.Finally sprinkle cumin powder and simmer for a minute and serve.

Sheermal

Ingredients: -

    2 cup refined flour

    4 tablespoon sugar

    4 strand saffron

    3/4 cup milk

    1/2 cup ghee

    2 Pinches salt

    Step 1 Soak saffron

Firstly, soak the saffron stands in 2 tablespoons of hot milk. Leave it for 20 minutes.

    Step 2 Prepare the dough

In a bowl, add refined flour, sugar, salt and mix them well. Add ghee and milk in batches and knead to form a soft dough. Cover it with a damp cloth and leave it aside for 2-3 hours.

    Step 3 Make thick chapattis

Now knead the dough again and make equal-sized balls from it. Roll into a thick and round Chapati. Use a fork to poke some holes in it.

    Step 4 Cook the sheermal

Now heat a tawa and put the sheermal on it. Cook from both side until golden brown in color. Repeat the step to make more sheermals from the dough.

    Step 5 Serve hot

Now smear the saffron soaked milk mixture on the sheermal and serve. You can also drizzle some honey on top to add extra sweetness.
