  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 tbsp cold unsalted butter, diced
  • 1 package thick-cut bacon, cooked and chopped
  • 1 cup maple syrup
  • 1 cup shredded cheddar cheese
  • 12 oz plain Greek yoghurt
  • 6 large eggs

  • Preheat your oven to 230°C and grease a baking sheet with non-stick spray.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Add the diced cold butter to the dry ingredients mixture. Using your fingers, break apart the butter cubes and mix them into the flour until it resembles coarse crumbs.
  • In a skillet over medium heat, combine the cooked bacon bits and maple syrup. Cook for 5 minutes or until the mixture thickens.
  • Add the cheddar cheese, maple bacon mixture, and Greek yogurt to the flour mixture. Mix until just combined.
  • Using a spoon, create small nests on the greased baking sheet for your eggs to fit in. Then, spoon the biscuit cookie dough around each nest.
  • Bake in the preheated oven for 10 minutes.
  • Remove the baking sheet from the oven and crack an egg into each nest.
  • Bake for an additional 5-7 minutes or until the egg yolks are set.
  • Season with salt and pepper to taste, then serve immediately.
