- 2 tbsp granulated sugar
- 3 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 4 tbsp cold unsalted butter, diced
- 1 package thick-cut bacon, cooked and chopped
- 1 cup maple syrup
- 1 cup shredded cheddar cheese
- 12 oz plain Greek yoghurt
- 6 large eggs
Method:
- Preheat your oven to 230°C and grease a baking sheet with non-stick spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Add the diced cold butter to the dry ingredients mixture. Using your fingers, break apart the butter cubes and mix them into the flour until it resembles coarse crumbs.
- In a skillet over medium heat, combine the cooked bacon bits and maple syrup. Cook for 5 minutes or until the mixture thickens.
- Add the cheddar cheese, maple bacon mixture, and Greek yogurt to the flour mixture. Mix until just combined.
- Using a spoon, create small nests on the greased baking sheet for your eggs to fit in. Then, spoon the biscuit cookie dough around each nest.
- Bake in the preheated oven for 10 minutes.
- Remove the baking sheet from the oven and crack an egg into each nest.
- Bake for an additional 5-7 minutes or until the egg yolks are set.
- Season with salt and pepper to taste, then serve immediately.
