Though the Chop suey has evolved into different variations, it generally features a mix of proteins, vegetables, and a savoury sauce, often served over rice or noodles. The Chop suey presents a fusion of flavours and cultural exchanges in culinary traditions. Though it shares a common name, American Chop Suey and Chinese Chop suey are distinctly different dishes that reflect their unique origins and ingredients.

Their  histories, ingredients, preparation methods, and cultural significance are different too.While in India, both American and Chinese versions are served with noodles, in a red or white sauce respectively, traditionally the dishes are quite different.

The Chinese Chop suey is believed to have originated in the United States during the late 19th century, amid the influx of Chinese immigrants who arrived during the Gold Rush. The term ‘chopsuey’ is derived from the Cantonese word ‘tsap sui,’ which means mixed pieces. This dish was created as a way to adapt traditional Chinese ingredients and cooking techniques to the American palate. It typically consisted of leftover meats, vegetables, and a savoury sauce, served over rice.

The American Chop suey, on the other hand, is a distinctively American dish with no direct roots in Chinese cuisine. It is believed to have been invented in New England -  a region comprising six states in the Northeastern United States such as Connecticut, Maine, Massachusetts, New Hampshire, Rhode Island, and Vermont, in the early 20th century and is a form of comfort food.

Despite its name, it bears little resemblance to its Chinese counterpart. The American Chopsuey is essentially a pasta dish made with ground beef, macaroni, tomato sauce, and various seasonings. It probably got the name Chopsuey because of its resemblance to the mishmash nature of Chinese Chop suey, combined with American ingredients and tastes.

Ingredients

The ingredients in Chinese Chop suey vary widely, but they typically include proteins such as Chicken, pork, shrimp, or beef, often sliced thinly. Vegetables such as Bean sprouts, bell peppers, bok choy, celery, water chestnuts, bamboo shoots, and mushrooms are also used along with a blend of soy sauce, oyster sauce, garlic, ginger, and cornstarch for thickening. It is served over steamed rice or crispy fried noodles.

American Chop suey features a more consistent set of ingredients, such as Ground beef or sometimes ground turkey cooked with Elbow macaroni or sometimes other types of short pasta, bell peppers, onions, and occasionally celery. The sauce is made with tomatoes with Worcestershire sauce, garlic, and herbs such as oregano and basil. The entire mixture is combined and served as a casserole or one-pot dish.

How It’s Cooked

Chinese Chopsuey involves stir-frying, a quintessential Chinese cooking technique. Vegetables and proteins are chopped into bite-sized pieces. The proteins are stir-fried in a hot wok with a bit of oil until partially cooked. Vegetables are added in a sequence to ensure even cooking. The savoury sauce is poured over the stir-fried mixture. Cornstarch mixed with water is added to thicken the sauce, ensuring it coats the ingredients well. The cooked chop suey is served over rice or crispy noodles, offering a balance of textures and flavours.

Ground beef is browned in a pot, followed by sautéing onions and bell peppers until tender. Tomato sauce, seasonings, and sometimes a bit of water or broth are added to the meat and vegetables.
