Aloo Curry without Onion and Garlic

The most frequently used vegetable, aloo, is renowned for its flavour and simplicity of preparation. It pairs well with a variety of meals. The best method to have a balanced diet is to eat foods that are high in carbohydrates and contain adequate amounts of proteins and fibre. Aloo is the most common vegetable in Northern India, and while there are many cuisines to choose from, Aloo Curry is one of the greatest.

Without onion and garlic, aloo curry is a hearty dish with a burst of flavours that will surely satisfy you. This recipe tastes just as excellent when made without the use of onion and garlic. Since ancient times, people have experimented with this vegetable, and now, even without the addition of onion or garlic, it can result in a dish that is perfectly balanced and soulful and will satisfy your appetite. Among all aloo dishes, aloo gravy is the most popular. With readily available ingredients and little effort, this dish might be made.

Ingredients:

  • 1 tablespoon Oil
  • 1 tablespoon Ghee
  • 1 teaspoon Cumin Seeds
  • ½ teaspoon Fennel Seeds
  • 1 Cinnamon Stick
  • 2 Cloves
  • 2 Bay Leaves
  • 1 tablespoon crushed Coriander Seeds
  • 2 Dry Red Chilli
  • ¼ teaspoon Asafoetida
  • 2 teaspoon Kashmiri Red Chilli
  • 2 Piece Tomato Paste
  • ½ teaspoon Turmeric Powder
  • 2 teaspoon Coriander Powder
  • ½ teaspoon Cumin Powder
  • ½ teaspoon Pepper Powder
  • ½ teaspoon Garam Masala
  • ½ teaspoon Dry Mango Powder
  • 5 piece Boiled Potato
  • 1 teaspoon Kasuri Methi

Method:

  • On a low flame and add 1 tablespoon of oil, 1 tablespoon of ghee and melt
  • When the oil is hot, add 1 teaspoon of cumin seeds, 1/4 teaspoon of fenugreek seeds, 1 cinnamon stick, 2 cloves, 2 bay leaf, 1 tablespoon of crushed coriander seeds, 1/2 teaspoon of fennel seeds, 2 dry red chillies, and saute it on a low flame
  • Add 1 tablespoon of grated ginger , 1/4 teaspoon of asafoetida, 2 teaspoons of Kashmiri red chilli powder, 2 finely chopped green chilli , mix everything and cook a little more on the same flame
  • Add the coarse paste of two tomatoes, salt as per taste and mix it well and cook for just 2 minutes
  • Now take a bowl and add 1/2 teaspoon of turmeric powder, 2 teaspoon of coriander powder,  1/2 teaspoon of pepper powder, 1/2 teaspoon of garam masala, 1/2 teaspoon of cumin powder, 1/2 teaspoon of dry mango powder and stir everything till it mixes well
  • Add 2 tablespoons of water and mix it well until it becomes a paste
  • After 2 minutes, add prepared masala paste into the pan, mix it well, and cook till gravy releases the oil from itself
  • add 5 crushed boiled potatoes, mix it well with everything, and cook for just a minute
  • add 1.5 cups of water , 1 teaspoon of Kasuri methi and mix it well
  • Put the lid on and cook for 4-5 minutes
  • After 4-5 minutes, remove the lid, add finely chopped coriander, mix it well, and turn off the flame and serve it hot

This Potato Gravy prepared without onion and garlic is now ready to serve on the table, a healthy balanced meal, could be combined with many things such as Puri and Chapati. All the spices added would result in an aromatic as well as full of flavours and ready to pair with the dish of your choice.
