Navratri Special: Ultimate Aloo Chaat Recipe

Navratri's special Aloo Chaat recipe also known as Vrat ki Tikki is a popular dish which is preferred by many to enjoy on Navratri. It is easy to prepare and flavourful as well. The dish is prepared with curd, chutneys and Aloo Tikki. It can be served at any time on Navaratri days. The dish is prepared with Sendha Namak and Kuttu atta. It is also served by many restaurants on Navratri days. You can also include some nuts in this recipe as per your taste.

Here's how to prepare this Navrati’s special Aloo Chaat recipe at home!

 Ingredients:

For Sweet Curd 

1 cup Curd 

2 tsp Sugar 

Sendha Namak, as per taste

Green Chutney (vrat ki chutney)

2 cups Coriander leaves 

1 cup Mint Leaves 

2 tsp Anardana 

2 tsp Roasted Cumin 

½ tsp Pepper powder 

A few Ice cubes 

½ cup Water 

 For Khatti Meethi Chutney (vrat ki chutney)

3 cups Water 

½ cup Anardana powder 

1 tsp Ginger grated

1 tsp Roasted cumin pounded 

Sendha Namak, to taste

½ tsp Black pepper powder

½ cup Gur grated 

 For Aloo tikki 

2 cups Potato (boiled & Mashed) 

¾ cup Kuttu Atta (bhuna) 

1 tsp Green chilli chopped 

1 tsp Ginger chopped 

Coriander chopped – a handful

Sendha namak – to taste

½ tsp Pepper powder

Oil/Ghee – for frying  

Melon seeds

Banana sliced

Grapes sliced

Pomegranate

Coriander sprigs

Roasted cumin

 Method:

In the first step, let’s prepare sweet curd. Take a bowl and add curd, sugar and salt to it. Mix all the ingredients properly and keep this sweet curd aside for sometime.

Now, let’s prepare the green chutney. Take a blender and add coriander leaves, mint leaves, anardana, sendha namak, roasted cumin, pepper powder and a little amount of water to it. Grind all the ingredients to form a fine paste. Transfer this paste to a bowl and leave it for sometime.

Next, it’s time to make khatti meethi chutney. Take a pan and heat it on a low flame.

Include, grated gur, black pepper, cumin, grated ginger, anardana powder and then water to the pan. Cook all the ingredients on a low flame and cook them for approximately 10 minutes until boiled.

Once it thickens, remove it from the pan and strain it. Put the leftover ingredients of the strainer in a blender along with some of the strained chutney and blend them. Once done, strain it again and keep it aside.

To make Tikki, take a plate and include boiled and mashed potatoes in it. After potatoes, add kuttu atta, chopped green chilli, coriander leaves, sendha namak, pepper powder and a little amount of ghee to it. Mix all the ingredients properly so that they are submerged properly.

Next, start picking a small portion of this mixture in your hand and form small tikkis. Keep forming these tikkis until all the mixture is used.

In this step, heat a pan on a low flame and add oil or ghee to it. Now, add these small tikkis one by one to it and start frying them. Once it is fried from one side, flip it and fry until golden brown and crisp.

Once the tikki is fried properly, take it out on tissue paper to remove excess oil.

Now put this tikki on another plate and top it up with chilled curd followed by green chutney, and khatti meethi chutney. Garnish this Navrati’s special Aloo Chaat recipe with grapes, sliced bananas and pomegranate seeds.
