It is believed that shrikhand was invented by travelling herders who strained out the whey of their yoghurt while travelling overnight. According to some books, Gujaratis and Maharashtrians claim to have invented it. The strained yoghurt turned sour by morning, so the herders mixed it with sugar and nuts in order to make it more palatable.

Ingredients:

  • 1 Cup - Hung yoghurt (hung curd)
  • 1/2 tsp - Saffron
  • 1 Chopped Fresh Mango
  • 1 tsp - Cardamom powder
  • 3/4 cup - Castor sugar
  • 1/2 cup - Mango puree

For mango salad:

  • 1 Lemon (juiced)
  • 20gm -  Mint
  • 2 tsp - Chaat masala

Method:

  1. First of all, whisk hung curd and castor sugar together in a container
  2. After that, add the mango puree and whisk some more until it gets smooth
  3. Now you will have to put saffron and cardamom powder into the mixture and properly mix them again
  4. Now add the chopped mango pieces and whisk them again to make a thick mixture
  5. Now it’s time to prepare mango salad by mixing diced mango with lemon juice, mint and chaat masala
  6. Once it's get done, serve the Aam Shrikhand chilled along with the mango salad
