Finely chop a bundle of spring onions and combine them with a pinch of salt in a bowl while the dough is resting. Before spreading the spring onion mixture equally on top, split the dough into small balls and roll each ball into a thin circle. Use a rolling pin to gently flatten the circular balls of dough after rolling it into a log and coiling it into a spiral. Cook each pancake in a pan with heated oil until it is crispy and golden brown on both sides. Serve these pancakes hot with chilli or soy-vinegar dipping sauce.

Spring Onion And Mushroom Stir Fry
This spring onion and mushroom stir fry is a tasty and easy choice on days that you need to fix a quick meal. In a large skillet, heat 1 tablespoon of oil over medium heat to start. Sliced mushrooms, like button or shiitake mushrooms, should be added and sautéed for 4–5 minutes, or until golden and soft. Add plenty of sliced spring onions after that, and stir-fry for a further two to three minutes. Add a little soy sauce for flavour and season with salt and pepper. In a bowl, combine 1 cup gram flour (besan), 1 teaspoon rice flour, and a touch of salt to make these delicious treats. Water should be added gradually until the batter is smooth. Add a handful of coriander leaves, chopped green chillies, and thinly sliced spring onions just before frying. Spoon the mixture into a frying pan filled with heated oil over medium heat. Fry until both sides are crispy and golden brown. A mint chutney or fresh dipping sauce usually accompanies these fritters.
Stir-Fried Spring Onion With Tofu
Stir-fried spring onions with tofu is a nutritious and high-protein dish. To begin, cut the firm tofu into bite-sized pieces after pressing it to eliminate more moisture. This is an easy and delicious breakfast option is a spring onion cheese omelette. In another bowl beat two eggs to which salt and pepper are added as desired. Put one teaspoon of butter or oil into a heated nonstick frying pan set at medium heat. Add the beaten eggs when it has melted. Top one-half of the omelette with your preferred cheese (such as feta or cheddar) and chopped spring onions as the eggs begin to set. Keep it for an additional one minute, or even until the eggs are firm and the cheese is melted. Slide the omelette onto a plate after carefully folding it in half.
Spring Onion And Egg Drop Soup
Enjoy a nourishing bowl of egg drop soup with spring onions on a chilly day. First, in a pot, bring 4 cups of chicken or vegetable broth to a simmer. To let their flavour seep into the broth, add the chopped spring onions and simmer for two to three minutes. Then, in a bowl, whisk a couple of eggs. Stir gently as you slowly pour the beaten eggs into the cooking broth. This will produce beautiful egg ribbons in the soup. Season with salt, pepper and soy sauce to your desired.
