Pork cubes and salty noodles Beijing's special serve. Zha Jiang Mian or “Fried Sauce Noodles” are so famous in China that the mere mention of it immediately makes people think of Beijing.
STEP 1.1 in a bowl, dilute dry yellow soybean paste and sweet bean sauce with water.
STEP 2.2 heat up oil in a wok over medium high heat. Add star anise, spring onion and ginger. Leave it. Stir the pork and rice wine. Cook until pork becomes pale.
STEP 3.1 pour in the diluted sauce bring it to a boil then leave to simmer for 20 minutes.
STEP 4.2 boil on full heat to thicken the sauce to the desired consistency.
STEP 5.3 blanch beansprouts and green soybeans in boiling water. take them out and drain. In the same pot, cook noodles. Drain and rinse under cold water for a few secs.
STEP 6.Serve with sauce and vegetables.
