• 500 gram White & sweet potatoes, steamed, cooled, loosely mashed
• 110 gram Jar capers, well drained or 50g capers
• 1 bunch Dill, leaves only, diced
• 5 Large spring onions, finely sliced
• 50 gram Gherkins, drained, finely diced
• 0.5 bunch Chives, finely diced
• 50 gram Gluten-free breadcrumbs, to add as you go
• 3 Eggs, Lightly Beaten
• As required White Pepper
• As required Salt
• 100 gram Extra virgin olive oil
• 100 gram Butter
