Directions : Spicy Honey Chicken Recipe

STEP 1.1 chop off the knuckles of 8 drumsticks and then cut them into 2 equal pieces each. Keep aside.

STEP 2.2 in a wok heat 2 tbsp oil and add 1 tsp sichuan peppercorns, 7 dried chillies and stir fry for a few seconds.

STEP 3.3 add 4 finely chopped cloves of garlic, ½ cm finely chopped ginger and 1 finely chopped spring onion and fry for a few seconds till aromatic.

STEP 4.4 then add the chopped chicken drumsticks, mix together and fry for 5 minutes.

STEP 5.5 fry until the meat loses its raw colour and turns white.

STEP 6.6 next add 2 tbsp dark soy sauce and stir well to ensure that the chicken is evenly coated by the soy sauce.

STEP 7.7 fry for 1 minutes and then cover the wok.

STEP 8.8 turn the heat to low and cook for 20 to 25 minutes. Stir regularly.

STEP 9.9 once the meat is tender, turn the heat to high and add 100 ml clear honey and salt to taste.

STEP 10.10 stir fry for a minute on high heat. Turn off the heat.

STEP 11.11 serve hot garnished with chopped spring onion.
