Sonso de yuca is a traditional Bolivian dish, especially in the Eastern region of Bolivia like Santa Cruz, Beni and Pando, the regions where cassava is highly cultivated. It is a popular street food in Santa cruz. Since cassava has a sweetish nutty flavor when cooked, sonso de yuca is often referred to as a sweet snack. It is usually served with a cup of coffee in the evening.

Directions : Sonso De Yuca Recipe

STEP 1.1 wash and peel the cassava roots and cut them into pieces.

STEP 2.2 rinse it with some cold water.

STEP 3.1 in a pan add water, salt and chopped cassava.

STEP 4.Ste 2 bring it to boil and let it cook for 30-35 minutes.

STEP 5.3 drain the cassava and mash it.

STEP 6.4 combine the mashed cassava and grated cheese and knead it well.

STEP 7.5 to this add eggs, milk, butter and season it with some salt.

STEP 8.6 knead well to make a firm dough.

STEP 9.Divide this dough into 8-10 balls.

STEP 10.8 place these balls on the skewers and grill it until they turn golden brown.
