• 2 Scallions, Sliced
• As required Salt And Pepper To Taste
• 1 tablespoon Lime zest
• 4 ounce 1 fresh poblano chili roasted, peeled and finely chopped or sub can green chilies
• 2 tablespoon Olive oil or butter
• 1 Shallot, chopped
• 2 tablespoon Flour
• 1.25 cup Chicken Broth Or Stock
• 0.75 cup Sour cream
• 1 teaspoon Ground coriander
• 0.5 teaspoon Salt and pepper
• 8 inch 68 tortillas or make homemade tortillas
