Chicken simmered in a delicious gravy flavoured with peanut butter, lime leaves and spices. Peanut Butter Chicken is packed full of flavour and ready in 20 minutes! A great mid-week meal, with no fussy ingredients!
STEP 6.4 stir fry for 2 minutes on medium heat. Ensure that the chicken pieces sare well located with all the spice powders.
STEP 7.5 next add 4 tsp crunchy peanut butter and 1 ltr chicken stock. Stir to mix the ingredients well.
STEP 8.6 bring to a boil and add 4 lime leaves. Push the leaves into the stock .
STEP 9.7; cover and cook on simmer for 30 to 40 minutes.
STEP 10.8 when chicken has cooked tender, add 1 tbsp sugar and salt to taste.
STEP 11.9 remove the lime leaves from the wok.
STEP 12.10 lastly add a small bunch of coriander and 3 spring onions roughly chopped. Stir.
STEP 13.11 turn off the what and transfer peanut butter and lime chicken to a serving dish.
