The mexican horchata is made of rice, almond and cinnamon soaked overnight and blended together. In spain and latin american countries, it is made of grounded almonds and tiger nuts/rice. I had tasted horchata latte at singapore. It was made of rice milk, almond milk and cinnamon. I have made a fusion by adding a nescafe latte, condensed milk and fresh cream. And the result is just awesome.
