Boneless chicken that is marinated and double fried is tossed in a hot ginger garlic red chilli sauce.This recipe is easy and quick to prepare.Taste is spicy.
450 gram Boneless chicken legs and thighs with skin
0.75 teaspoon Black pepper powder
1.5 teaspoon Salt
4 teaspoon Soy sauce
1 No.s Egg yolk
1.33 cup Cornstarch
1.33 cup All purpose flour

Directions : General Tso's Kitchen Recipe
STEP 1.1 cut 1 pound of boneless chicken legs and thigh with skin into big chunks. Place them in a bowl and marinate with ¾ tsp pepper powder, 1 ½ tsp salt, 2 tsp soy sauce, 1 egg yolk which will make the chicken crispy. Mix well and let it marinate for 15 minutes.
STEP 2.2 in a bowl mix ⅔ cornstarch with ⅔ all purpose flour . Whisk together.
STEP 3.3 place the marinated chicken in a large container. Cover the chicken with the flour. Put the lid on the container and shake the chicken and flour well.the chicken will be well coated.
STEP 4.4 put the chicken pieces in a sieve and shake off the excess flour.do this in batches. Keep the chicken aside.
STEP 5.5 in a pan, heat an oil that has a high smoking point, for deep frying. Heat it to 350 degrees fahrenheit.
STEP 6.6 carefully place the chicken pieces in the hot oil. Let it fry for 1 to 2 minutes till the surface firm up. Then flip the pieces over. After 4 to 5 minutes of frying this way, the outside layer will be light golden and by touching it with chopsticks it will feel crispy. Remove the chicken from the oil and place them in a sieve to drain off the excesso il. Keep aside.
STEP 7.7 once all the chicken is fried , let it rest for 15 minutes.
STEP 8.8 now fry the chicken again (double frying). This makes the outer layer stay crispy longer. Before second frying remove the particles floating in the oil from the first frying.
STEP 9.9 heat the oil to 370 degree fahrenheit , place the chicken in the hot oil and keep turning them over for 1 to 2 minutes till they are golden brown. Take them out of the oil and place in the sieve and shake off the excess oil. Keep aside.
STEP 10.10 to make the sauce, in a mixing bowl, add 4 ½ tbsp of sugar, ½ tsp cornstarch and mix together.add 2 ½ tbsp chinese black vinegar, 1 tbsp +2 tsp of soy sauce, 3 ½ tbsp water. Mix until well combined and set aside.
STEP 11.11 heat the wok and add 1 tsp oil, 1 tsp grated ginger, 1 ½ tsp grated garlic and 8 to 10 dry red chillies.on low heat saute till the chillies are slightly smokey and release aromas.the chillies will get dark spots.
STEP 12.12 at this stage add the prepared sauce. Cook on medium heat stirring continuously till it becomes a thin syrup texture.
STEP 13.13 then add the double fried chicken and toss till the chicken is well coated.
STEP 14.14 general tso’s chicken is ready to serve. Transfer to a serving bowl and sprinkle ½ tsp sesame seeds for a nutty crunch.
