Fresh and flavourful preparation of shrimp tossed with vegetables and seasoned rice that highlights the seafood. Usually a combination of veggies, beaten egg, and a protein such as the shrimp we are using in this recipe, or chicken, fish, or tofu.
STEP 1.1 in a small bowl add 1 tbsp soy sauce, ½ tbsp oyster sauce, 1 tsp dark soy sauce. Mix together . Keep aside.
STEP 2.2 in a large wok add 1 tbsp oil, swirl it to cover the surface of the wok. Let it get hot.
STEP 3.3 add 6 oz mixed vegetables like green peas, diced carrots and diced onions, 1 tsp minced garlic.stir fry on medium high heat for 4 to5 minutes till the carrot is a little tender. Push the vegetables to one side of the wok.
STEP 4.4 add 1 whisked egg into the wok and let it fry. Then using the spatula break it into smaller pieces. Then mix this along with the vegetables and return the mixture to the side of the wok again.
STEP 5.5 add a little more oil to the wok as the egg would have absorbed any leftover oil.
STEP 6.6 turn the heat to high and add 6 oz washed and peeled shrimp.
STEP 7.7 fry the shrimp for 1 minute on each side or until they are pink on each side. Do not cook the shrimp through.
STEP 8.8 then add ½ tsp salt and combine the vegetable egg mix with the shrimp and toss together. Remove from the wok and set aside.
STEP 9.9 in the same wok add 1 ½ tbsp of oil, add 2 ½ cups rice and stir fry for upto 6 minutes till the rice is jumping in the wok.
STEP 10.10 at this stage add the shrimp mixture and the prepared seasoning to the wok. Mix well to combine all the flavours and till the rice changes colour.
STEP 11.11 taste for seasoning and adjust the sugar or salt accordingly.
STEP 12.12 add diced scallion and freshly ground pepper powder as per taste. Squeeze some lime juice (optional) over the rice and toss together.
STEP 13.13 serve hot
