• 3 tablespoon Olive oil, canola or vegetable
• 2 cup Beef stock
• 14.5 ounce Can fire roasted diced tomatoes
• 1.5 pound Lttle potatoes, sliced in 1/2 or quarters
• 1 Medium onion, diced
• 4 Stalks celery, diced
• 1 cup Baby carrots
• 2 teaspoon Worcestershire sauce
• 1 teaspoon Balsamic vinegar
• 1 teaspoon Dried oregano
• 1 teaspoon Minced garlic
• 1 Bay leaf
• As required Salt and pepper, to taste
• 3 tablespoon Cornstarch
• 3 tablespoon Water or beef stock
