Briouats are small Moroccan pastries that are stuffed with a variety of fillings and then fried. The filling combines sweet-salty flavors a combination of crisp layers of the crepe-like werqa dough.
STEP 1.First, put the chinese vermicelli in boiling water and let the vermicelli sit for around 5 minutes until they soften up. After 3-5 minutes, strain the vermicelli from the water. Using a sharp knife, cut the vermicelli into small pieces. Place in a bowl and reserve.
STEP 2.Preparing the shrimp in a flat pan, add vegetable oil, butter let the aroma infuse, and add salt, paprika, ground cumin, red chili pepper, crushed garlic, and finely chopped cilantro. Place the pan on medium flame and cook the spices with the butter and oil for 4-5 minutes.
STEP 3.Now transfer the pre-cooked shrimp. You can buy the shrimp pre-cooked or you buy raw shrimp and place it in boiling water for 3-4 minutes until the shrimp becomes pink.
STEP 4.Place the shrimp in the pan and mix them well with the spices. Cook for around 3 minutes on medium flame. Remove the shrimp from the pan and place them in a bowl.
STEP 5.Add the chopped vermicelli to the pan and mix it with the remaining sauce/spices. Using a knife and cutting board, cut the shrimp into small pieces.

STEP 1.Finally mix the vermicelli and shrimp together. Let the filling cool off before you can use it to fill the phyllo dough or warqa to make briouats.
STEP 6.You can either fry the briouats or heat some vegetable oil in a flat pan. Once hot, start frying the briouats from all sides until they become golden brown.
STEP 7.Once done, remove the briouats from the oil and place them in a plate covered with a paper towel to absorb all excess oil.
STEP 8.If you want to bake the briouats, brush them with melted butter and bake them in a preheated oven (400 f / 200 c) until they become deep golden brown. Serve them hot.
