0.125 inch Beef chuck cut into thin slices of thickness 300 gms
300 gram fresh egg noodles
3 tablespoon peanut oil
1.5 cup sliced onion
3 tablespoon oyster sauce
1.5 teaspoon dark soy sauce

Directions : Beef Lo Mein Recipe
STEP 1.1 slice 300 gms of beef chuck into thin slices of ⅛ inch thickness.
STEP 2.2 add the beef in a mixing bowl and add ¼ tsp salt, ⅛ tsp baking soda to tenderize the meat, ½ tbsp soy sauce, 2 tbsp chinese cooking wine, ½ tbsp cornstarch, black pepper to taste. Rub the meat to coat well with the seasoning. Cover and let it marinate for 20 minutes.
STEP 3.3 fill a pot with water and bring it to a boil. Then add 300 gms fresh egg noodles. Cover and cook for a few minutes. Fresh noodles cook very fast.
STEP 4.4 heat a wok on maximum heat till smoking hot. Then add 3 tbsp peanut oil and swirl so the oil created a light non stick surface on the hot wok. Let the oil heat till it is smoking.
STEP 5.5 at this stage add the marinated beef and stir. As the wok and the oil are very hot the beef will change colour and sear very quickly. When the beef is almost seared and pink spots are still visible add 1 ½ cup sliced onion and stir for another 15 seconds.
STEP 6.6 remove the noodles from the boiling water and strain them.
STEP 7.7 add them to the wok with a small bunch of halved scallions and turn off the heat.
STEP 8.8 then add 1 ½ tbsp soy sauce, 3 tbsp oyster sauce, 1 ½ tsp dark soy sauce for colour. Gently mix all the ingredients together till the noodles are well combined with the sauces and the beef .
