This recipe started its life as a spicy strawberry nigori, from the website of the takara sake company. We found it to be overly-sweet, but with lots of potential. We reworked the proportions and re-christened it with a name we accidentally invented as we fumbled our way through greetings in japan (it means thank you, im sorry a surprisingly useful sentiment for a visitor) a japanese spice blend like shichimi togarashi makes for a beautiful garnish sprinkled over the egg white foam, especially if you use a stencil to make a pretty pattern. If you dont have that, a light dusting of freshly-ground black or pink peppercorns will be just lovely.
