The experience, which is curated by Chef Osama Jalali, highlights the distinctive dum technique and layered spices of Awadhi cuisine, bringing traditional flavours into a sophisticated modern setting. Classics like Galouti Kebabs and Sheermal, creamy Nihari, fragrant Awadhi Biryani, decadent Mughlai Kormas, and traditional desserts like Shahi Tukda and Kesar Phirni are all featured on the pop-up menu, which is held at the resort's famous restaurant Miri. The feast delivers an immersive dining experience that combines artistry with classic narrative, enhanced by Mughal-inspired décor and live Qawwali.

In addition to dishes like Tondli Bhaat and Tendlya–Mooga Ghashi, where vegetables are slowly cooked in delicate coconut-based gravies, the buffet features vegetarian staples that are the foundation of Konkan home cooking, such as the earthy warmth of Ukde Tandalachi Bhakri and the calming simplicity of Dalitoy. Seafood enthusiasts can anticipate flavourful dishes like Rawas Alle-Kadle Curry, Bombil Hirwa Curry, and a well chosen assortment of fish fries that perfectly represent the crisp, coastal character of the Konkan, as well as coastal favourites like Sungta Hooman and Tisrya Masala, which are rich but restrained. The Dimsum Room is embracing Mumbai’s mild winter with a cosy new Shabu Shabu pop-up under the open sky at its Zen Garden terrace. You can savour the steaming broths along with the slow, gather-around-the-pot kind of comfort. Set inside a century-old Kala Ghoda building, the experience gives the best of both Japanese and Korean flavours. The Dimsum Room was born out of an easy idea on how to create a place where food and music blend in a way that is both effortless and incredibly engaging. Costal Crossings, FARRO Pune

Farro, Koregaon Park, Pune, is setting the table for Coastal Crossings, a thoughtful seven-course tasting menu crafted with Chef Vardaan Marwah alongside Farro’s own Chef Priyamvada. It’s a quietly confident meeting of two coastlines–the breezy, sun-kissed flavours of the Mediterranean and the deep, comforting rhythms of South Indian coastal cooking. You begin with Tzatziki, Smoked Cucumber, Basil, and Quinoa, then move on to Pul Biber Manti, which is stuffed with lamb or veggies and ends with Turkish Chilli Crisp and Peanut Tahina. A Malabar-inspired dish of raw mango and coconut served with asparagus or prawns follows mezze-style appetisers. The cuisine culminates in a Chikmagalur Tiramisu with filter coffee and dark chocolate, followed by a redesigned Moussaka that is available in lamb or vegetarian varieties. For inspiration, FARRO scrolled back the ages, naming itself after farro, an ancient pearly wheat-like grain, often seen in Italian regional cuisine and Middle Eastern traditional preparations. Farro, it is believed, was abundant across the world when the Egyptian Pharaohs were in their prime (some legends claim they were entombed with farro for safe passage in their afterlife). The grain travelled to Europe along with Roman conquerors. From here, its presence blossomed in other countries, including India.

The Mumbai staple, which is well-known for its ingredient-first, sophisticated comfort food, will present its distinctive dishes in Bengaluru, including grilled sea bass, classic Cacio e Pepe, 48-hour fermented Neapolitan pizzas, Beetroot Carpaccio, and Bloody Mary Ceviche. The pop-up, which takes place in The Conservatory's design-led environment, promises a concentrated, flavour-forward glimpse of La Panthera's culinary philosophy, catered to the city's dining patrons.  The Conservatory, whose space is inspired by the said glasshouse, showcases the finest when it comes to all things food. The year-old pop-up space, located inside The Courtyard, is Bengaluru's happening spot when you want not just to enjoy culinary treats from Goa to Spain, but also rub shoulders with the chefs who are bringing you the same. The space features a jungle-green finish with a high-ceiling complete with a glass chandelier and a glass roof. People love the glass roof; there's no better way to enjoy Bengaluru's weather, rain or shine. You'll find native foliage peppered all around the space, and even the seating upholstery features birds and greens. In short, it's beautiful, relaxing, and (excuse our use of the term) Insta-worthy.
