Cooking with leftovers is an art and a hugely recommended practice. Indian households usually have a few leftover food items from every meal and it’s wise to use these leftover food items to create a new and delicious dish. From making kheer from leftover cooked rice to making potato soup from leftover baked potatoes, there’s a lot of fun that one can have while cooking with leftovers. One food that’s usually made surplus in desi households is roti. These rotis can be utilised to make a fusion dish from another cuisine.

Ingredients: 

- Boiled potato - 3, medium

- Fresh Coriander - 2 tbsp

- Boiled sweet Corn - 1/2 cup

- Salt as per taste

- Chaat masala - 1 tsp

- Chilli flakes - 1 tsp

- Oregano - 1/2 tsp

- Mozzarella cheese

- Tomato sauce - 1 tbsp

- Oil - 1 tsp( for one taco)

Method: 

Mash some boiled potatoes. Add Coriander , Sweet Corn, Chilli flakes, Oregano, Chaat masala and Salt to the mashed potatoes and mix well to form a potato mixture. 

Take the leftover rotis and spread them over a plate. Spread some tomato sauce over the roti. 

Smear one side of the roti with shredded mozzarella cheese. Add the potato mixture on top of the shredded mozzarella cheese. Top the potato mixture by sprinkling some more mozzarella cheese. Add chilli flakes on top. 

Now fold the roti in the shape of a taco and in a wok, heat oil. Fry the taco roti on both sides. Remember to do this on low heat. 

Once the roti is a bit crisp you can take it out and plate it. Enjoy your roti taco with some tomato ketchup.
