Probably one of the first love of every foodie, this pizza has a special place in all of our hearts. Pizza margherita is a typical neapolitan pizza that’s made with san mariano tomatoes, extra virgin olive oil, salt, basil and loads of mozzarella cheese. From late night pizza parties with friends, to celebrating your breakup, a margherita pizza is all you need, to kiss your woes goodbye. However, many times we avoid eating this sinful treat just because of the calories that it carries. For all such moments of doubt, we have a solution called - pizza margherita zucchini bites. These yummy and healthy bites have become a hit with every foodie who wants to enjoy delicious food while also taking regard of the calories.

The margherita zucchini bites are based on the famous Italian margherita pizza. Those of you who have tried it, know what I’m talking about. Fresh basil, ripe juicy tomatoes and creamy mozzarella make for the most delicious combination of all times! The pizza margherita zucchini bite is basically a bite size margherita pizza laid on a zucchini bed, instead of flour. The many health benefits of zucchini, makes this a great low calorie treat to have.

Zucchini is rich in vitamin B6 which is a vitamin that can help with regulating blood glucose. According to a research, this vitamin may even play a protective role against diabetes. If you are not comfortable with eating dairy and want to leave out the mozzarella from this treat, you can alternatively use avocado and balsamic syrup in its place on top of the zucchini bed. While we agree that making a cheesilicious delicacy like a pizza healthy, is no less than a crime, we came across this healthy pizza margherita zucchini bite recipe and couldn’t wait to share it with you: 

Ingredients: 

  1. Salt 
  2. Half teaspoon garlic powder 
  3. Two teaspoons chopped basil 
  4. Mozzarella cheese slices 
  5. One large zucchini 
  6. Oregano 
  7. Cherry tomatoes 
  8. Two tablespoons of grated parmesan cheese 

Method: 

  1. Pre-heat oven to 400 degrees. Take a baking sheet and line it with foil in the oven and sprinkle some cooking spray over it. 
  2. Place the zucchini slices on the baking sheet and lightly sprinkle them with oregano and  garlic powder. Then take two tomato slices and put them atop the zucchini slices. Next, sprinkle some salt, pepper and parmesan cheese on these slices. 
  3. Taking some more cooking spray, spray the slices from the top and bake them for around 9 minutes. After that, pause to top the slices with mozzarella cheese. Next, put the oven on broil and cook for 2-3 minutes till you see the cheese starting to melt. 
  4. Finally, take them out of the oven and put some fresh basil atop before you dig in to them and enjoy.
