During the month of Ramadan, desserts play a crucial role in completing the iftar meal. After a day spent fasting and having a hearty meal at iftar, people often look for sweets that feel comforting but also light and not too heavy. While traditional desserts like kheer, phirni, and halwa remain top choices always, sometimes, it also feels good to twist the regular favourites into something with ingredients that add more in-depth flavour to them. And, one such ingredient is caramel.
Caramel is prepared by slowly melting sugar until it turns golden and fragrant, and has a warm, slightly smoky sweetness that goes well with Indian desserts. Its rich flavour works particularly well when mixed in milk-based sweets, breads, and puddings. Instead of overpowering the original taste of the dish, caramel often gives it a subtle complexity that perfectly balances the sweetness and makes the taste more layered.
From puddings to creamy sweets, here are six Indian-style desserts that you can make using caramel, as it is the ingredient that quietly changes familiar flavours into something that you will love more than the familiar classic taste.
Caramel Phirni
Phirni is traditionally a light rice pudding that is served chilled, but adding a little caramel will give it a completely distinct personality. Adding the caramel gives a deeper sweetness that perfectly balances the richness of milk and the cream. When served cold in small bowls and garnished with chopped nuts, caramel phirni feels both familiar with that classic creamy taste and extremely decadent, making it a lavish addition to your dessert spread.

Caramel Bread Pudding
Bread pudding has long been a dessert that has been made out of necessity in many Indian homes, as it is prepared with leftover bread and some milk. When caramel is added to it, the dish becomes much more indulgent than just being a basic. Simply pour a layer of caramel into the base of a baking dish before you put the soaked bread, milk, eggs, and sugar on it. As it sits, the caramel will seep into the pudding to make a glossy sauce, which appears visually appealing. The result you get is soft, custardy pudding having a slightly bittersweet caramel layer that tastes beautifully with the gentle sweetness of the bread.
Caramel Seviyan Kheer
Seviyan kheer is one of the most loved sweets prepared during Ramadan time, particularly for Eid celebrations. Adding caramel will give it a richer dimension to the classic recipe. The vermicelli is roasted lightly in ghee and simmered in milk until soft, but instead of plain sugar, a thin caramel syrup is stirred into the mixture. This will give the kheer a light golden shade with a subtle toasted sweetness. While you have a bite of it, that subtle hint of cardamom and bits of chopped nuts create a dessert that feels traditional in every bite yet is a little elevated compared to the regular version.

Caramel Shahi Tukda
Shahi tukda is already referred to as a sumptuous dessert that is prepared from frying the bread pieces and then soaking them in sugar syrup and topping with a thick malai layer or rabri. When caramel replaces the regular sugar syrup, the dish creates a richer and much deeper flavour. The fried bread slices soak up the caramel syrup thoroughly, giving them a light, negligible bitterness that offsets the creamy sweetness of the rabri when it is poured from the top. Try it once, and caramel shahi tukda will surely become a striking iftar dessert that everyone will talk about.
Caramel Kulfi
Kulfi is one of the many loved frozen desserts of all time, and caramel mixes beautifully into it with its dense, creamy consistency. In this version, sugar is caramelised before it is mixed with slowly thickened milk, which gives the kulfi a little smoky sweetness and its natural golden colour. The mixture is flavoured with cardamom or chopped nuts before it is poured into the moulds to freeze. Unlike ice cream, caramel kulfi has a firmer texture, which lets the caramel flavour remain bold and noticeable. Make sure to make a large amount, as people will surely ask for a repeat serving of it.
