  • 4 ladlefuls dosa batter
  • 2 tablespoons Schezwan sauce
  • ½ cup finely shredded cabbage
  • ¼ cup grated carrot
  • ¼ cup finely chopped capsicum
  • 2 tablespoons spring onion
  • 1 cup grated mozzarella cheese
  • 1 teaspoon oil
  • Salt, according to taste

Method

  1. Heat a dosa tawa until properly hot, then lightly grease it.
  2. Now, pour a ladleful of dosa batter into the centre and spread it into a thin circle.
  3. Drizzle a little oil around the edges and cook until the underside becomes crisp.
  4. Then, spread a thin layer of Schezwan sauce over the dosa.
  5. Quickly stir-fry your cabbage, carrot, and capsicum in a separate pan for 2–3 minutes, keeping them slightly crunchy.
  6. Then, place the vegetables over the dosa and sprinkle with spring onions.
  7. Finally, add mozzarella cheese and allow it to melt.
  8. Then fold or roll the dosa and serve immediately.

Pizza Dosa

Ingredients (Serves 2)

  • 4 ladlefuls dosa batter
  • 3 tablespoons pizza sauce
  • 1 cup grated mozzarella cheese
  • 2 tablespoons sweetcorn
  • 2 tablespoons finely chopped capsicum
  • 2 tablespoons finely chopped onion
  • 2 tablespoons sliced mushrooms
  • 1 teaspoon oregano
  • 1 teaspoon chilli flakes
  • 1 teaspoon oil

Method

  1. Heat a dosa tawa and lightly grease it.
  2. Now, pour in your batter and spread into a medium-thin dosa.
  3. Drizzle oil around the edges and cook until the base turns crisp.
  4. Spread homemade pizza sauce evenly all over the surface.
  5. Then scatter the sweetcorn, capsicum, onion, and mushrooms over the top.
  6. Cover generously with mozzarella cheese.
  7. Sprinkle oregano and chilli flakes.
  8. Now, cover the tawa and cook on low heat until the cheese melts completely.
  9. Finally, fold into a half-moon or roll tightly and slice into pieces before serving hot.

Thecha Cheese Dosa

Ingredients (Serves 2)

For the thecha

  • 8–10 green chillies
  • 4 garlic cloves
  • 2 tablespoons roasted peanuts
  • ¼ cup fresh coriander
  • ½ teaspoon cumin seeds
  • Salt, according to taste
  • 1 teaspoon lemon juice
  • 1 teaspoon oil

For the dosa

  • 4 ladlefuls dosa batter
  • 1 cup grated mozzarella or cheddar cheese
  • 1 tablespoon finely chopped onion
  • 1 teaspoon oil or ghee

Method

  1. First dry-roast the green chillies and garlic until lightly charred.
  2. Then add in your peanuts and cumin seeds.
  3. Pound everything coarsely together using a mortar and pestle.
  4. Then add coriander, salt, lemon juice, and oil. And pound again while keeping the mixture chunky.
  5. Now, make a crisp dosa on a hot tawa.
  6. Spread a thin layer of thecha over its surface.
  7. Sprinkle generously with cheese and chopped onion.
  8. Finally, cook on low heat until the cheese melts.

  • 4 ladlefuls dosa batter
  • ½ cup cooked rajma or black beans
  • ¼ cup sweetcorn
  • ¼ cup finely chopped capsicum
  • 2 tablespoons chopped onion
  • ½ teaspoon cumin powder
  • ½ teaspoon smoked paprika
  • 1 cup grated cheese
  • Salt, according to taste
  • Fresh coriander

  1. First, mash the beans lightly, keeping them chunky.
  2. Then mix in your sweetcorn, capsicum, onion, cumin, smoked paprika, and salt.
