Tips For One Making Cheesy Spaghetti

Ingredients

    1 tablespoon olive oil

    6 strips thick cut bacon, cut into lardons

    3 cloves garlic, finely diced

    2 cups heavy cream

    ¾ cup Parmesan, grated

    ½ cup Pecorino Romano, grated

    1 tablespoon black pepper

    1 pound spaghetti, cooked with ¼ cup pasta water reserved

    Zest of 1 lemon

    1 (5-ounce) wheel of brie cheese

    1 ½ cups breadcrumbs

Steps

    Preheat the oven to 350 degrees.

    Using medium to high heat, sauté bacon pieces in olive oil until golden brown. Sprinkle garlic over the bacon and sauté until fragrant. 

    Add heavy cream to the skillet when the bacon is fragrant. Add the Parmesan, Pecorino Romano, and pepper, and simmer until slightly thickened. 

    Add the cooked pasta and reserved pasta water, and thoroughly mix. Stir in the lemon zest.

    The heat should be turned off. Divide the brie wheel in half width-wise.

    Place the halved wheels on top of the pasta, top with breadcrumbs, and bake for 10 to 15 minutes, until the cheese is melted.

    Serve right away. Pasta can be stored in the refrigerator for up to three days.
