Here's a Valentine’s Day special recipe From San Gimignano at The Imperial by Chef Prem K Pogakula- Executive Chef at The Imperial New Delhi has shared this special recipe of “Saffron cauliflower bisque with wild mushroom ravioli and Parma ham'.

 Ingredients

    1 teaspoon olive oil

    1 onion, finely chopped

    1 clove garlic, finely chopped

    1 potato, peeled, diced

    1 head cauliflower, chopped

    3 cups stock

    4 slices lean bacon

    2nos cooked ham dices

    75g provolone cheese diced

    Freshly ground black pepper, to taste

    Saffron from San Gimignano water -a tea spoon

    1 Nos wild mushroom ravioli

 Method.

 •Heat oil in a large saucepan over a medium heat. Cook onion and garlic until softened. Add potato and cook for 3-4 minutes. Add cauliflower and stock. Bring to the boil. Reduce heat and simmer for 30 minutes until vegetables are tender.

•Meanwhile, fry or grill bacon until crisp.

•Purée soup in a blender (or use a stick blender). When thick and creamy, gently reheat. Add cheese, saffron water and stir through until melted. Season with pepper. Garnish with provolone cheese.

•Cook and toss ravioli in butter and place in a deep plate and pour the soup in the side.

•Top toast with bacon, Parma ham slice.
