K rishnanagar, a town in the Nadia district of West Bengal, India, is famous for its rich cultural heritage and culinary traditions. One of the town's most beloved and iconic sweet dishes is Shorbhaja, a delectable delicacy made with layers of crispy, flaky pastry and a sweet filling made of khoya, sugar, and cardamom.

The history of Shorbhaja can be traced back to the early 19th century when a talented confectioner named Surukumar Das invented the recipe. Das was a resident of Krishnanagar and was known for his skills in making various types of sweets and snacks. He was particularly famous for his expertise in making layered pastries and was always experimenting with new recipes to create unique and delicious treats.

One day, Das decided to create a new sweet dish that would be unlike anything anyone had tasted before. He began by making a dough with flour, ghee, and water and kneaded it until it became smooth and elastic. He then rolled out the dough into thin sheets and layered them one on top of the other, spreading ghee between each layer to create a flaky and crispy texture. For the filling, Das used khoya, a type of solidified milk that is commonly used in Indian sweets. He mixed the khoya with sugar and cardamom powder, creating a rich and aromatic mixture that was both sweet and savoury. He then spread this filling over the layered pastry and rolled it into a long cylinder, which he cut into small pieces and deep-fried until golden brown. The result was a heavenly sweet dish that was both crunchy and creamy, with a rich, buttery flavour and a hint of cardamom.

Surukumar Das named his creation Shorbhaja, which means "crunchy delight" in Bengali, and it quickly became a sensation in Krishnanagar. Das was known to make this dish only during the night because he feared people would steal the recipe.
