The Hyderabadi cuisine is one of the finest in the country, and houses some of the most iconic, globe-trotting and gorgeous recipes in the world. Be it the stalwart Hyderabadi Chicken Biryani, the GI tagged Haleem, the resplendent Shahi Tukda or the flavour packed Baghara Baingan, the region’s exclusive spices and historically nurtured style of cooking churns out one gem after the other. Reminiscent of the trademark opulence in Hyderabad’s food, Chicken Hyderabadi is one spicy, sumptuous, and savoury delicacy that is as palatable as its more famous culinary associates.

 

The dish requires three discrete sets of preparation—large chicken chunks marinated in yoghurt, onion, ginger, garlic, chilli and turmeric, a coarse blend of freshly roasted spices and garam masala, and a bowl of golden-brown, crispy-fried onion slices called Birista, a typical Biryani topping. When these individually appetising ingredients come together in a generously greased pan and cooked on low heat, the result is a curry as magnificent as our gustatory senses can anticipate. The dish is best enjoyed with a side of Jeera rice (cumin rice), Naan or Paratha (unleavened bread).

 

Chicken Hyderabadi truly stands for Hyderabad’s pompous cultural history and socio-political crossovers. The Hyderabadi haute cuisine is a perfect amalgamation of South Asian, Mughlai, Turkic, and Arabic influences over its significantly long history of power transfers, along with the local effect of Telangana and Marathwada styles. However, the most noteworthy impact on Hyderabad’s food was made by the 17th century Nizams, believed to be the creators of something precursory to the modern Chicken Hyderabadi.
