Ingredients:

 2 cups all-purpose flour

 1/2 cup unsalted butter

 1/2 teaspoon kosher salt

 1 tablespoon grated lemon zest

 1/2 teaspoon baking soda

 2 tablespoons fresh lemon juice

 Lemon Glaze

 1 cup sugar

 1 teaspoon vanilla extract

 1 large egg

Method:

 Preheat the oven to 350°F.

 Mix the flour, baking soda, salt, and lemon zest in a medium bowl.

 Using an electric mixer, whip the butter and sugar in a sizable bowl until they are light and fluffy.

 Beat till mixed after adding the egg, vanilla, and lemon juice.

 Beat in the flour mixture while the mixer is on low.

 Place big scoops of dough next to each other onto two baking sheets, spacing them apart by one inch.

 Bake for 15 to 20 minutes, flipping the sheets halfway through until the edges are brown.

 After 2 minutes of cooling on the baking pans, move the cookies to a wire rack to finish cooling.

 The lemon glaze should be applied to cookies and left to set for about an hour.
