World Vegan Day: Try This Vegan Mac N Cheese For Breakfast

World Vegan Day is celebrated every year on November 1 to mark and promote the benefits of veganism for humans as well as the natural environment. Veganism is a dietary practice, in which people refrain from eating meat and animal-based products (including dairy products). That limits many delectable milk-based or dairy-based delicacies. Mac n cheese, for instance, is one dish that is packed with oodles of cheese and is a favourite of many. The joy of gorging on the rich and comforting mac and cheese, while curled up in a cosy blanket is unparalleled, don’t you think? 

However, those who have turned vegan end up giving up on their cravings for mac n cheese. But what if we tell you that now you can make mac and cheese at home. This recipe is vegan, dairy-free, and won't even hamper your weight-loss goals.

Yes, you can make cheese without the use of dairy. What makes this recipe different from the others is that it is devoid of dairy and excess calorie content. Isn’t that simply perfect? The cheesy element is attained by blending together hearty vegetables and nuts that complement the boiled macaroni. 

This mac n cheese recipe is perfect for anyone who has no time for an elaborate breakfast and is strictly vegan. If you are an office-goer who doesn't have the time to prepare a wholesome meal during morning hours, this vegan mac and cheese can come to your rescue as it is quite easy-to-prepare and won't take much of your time and effort. All you need to do is just keep some boiled macaroni ready in advance and follow the recipe mentioned below.  

Ingredients:

1 cup macaroni 

1 cup small florets of broccoli (optional) 

For vegan cheese:

1/2 cup cashews (chopped) 

1 cup potatoes (peeled and cubed)  

1/2 cup carrots (sliced) 

3 tbsp fresh lemon juice. 

1 tsp salt 

1/4 cup nutritional yeast 

1/4 tsp red chilli powder 

Method: 

  • First boil the carrots and potatoes for about 8 minutes or until they are tender and soft. Let it cool once done. 
  • To make the vegan cheese, add the boiled veggies, cashews, nutritional yeast, salt, red chilli powder, and lemon juice, along with ½ cup of water to a blender, and blend it until smooth. 
  • Now, take some boiled water, add broccoli florets to soak for some time or until they turn a bit soft. 
  • Add the prepared cheese on a pan, whisk it occasionally. 
  • Once it thickens, add macaroni to it followed by broccoli. 
  • Saute and serve hot.
