World Pizza Day: Chef Gunjit Singh Chawla Shares Easy Recipes

Every year, World Pizza Day is celebrated on February 9th to mark the growing and immense love everyone around the world feels for the round-shaped dish. Though born in Italy, pizza is often hailed as one of the best dishes in the world due to its universal appeal and unique combination of flavours, textures, and cultural significance. Its versatility is a key factor; from traditional Margherita to innovative toppings like barbecue chicken or pineapple, there's a pizza for every palate.  

The crust, whether thin and crispy or thick and doughy, provides a satisfying base, while the tomato sauce offers a burst of tangy freshness. The gooey, melted cheese ties everything together, creating a harmonious blend of savory goodness. In India, pizzas have now become a mainstay and not only have people started enjoying pizza in its Italian avatar, but have also started innovating with Indian flavours as toppings too.

Artisan Goan Chorizo, Bacon, Red Onion, Tomato   

Ingredients: -  

Pizza Dough 200 gms  

Pizza Sauce 120 gms  

Goan Chorizo 100 gms  

Onion 35 gms  

Bacon 60 gms  

Cherry Tomato 20 gms  

Brown Sugar 6 gms  

Cheese Mozzarella Shredded 125 gms  

Salt 2gms  

Black Pepper 1gm  

Pizza Dough: -  

Refine Flour 1kg  

Milk Tetra Pack 500ml  

Water 150ml  

Yeast Fresh 15gms  

Sugar 15gms  

Salt 15gms  

Olive 60ml  

Pizza Sauce: -  

Canned Peel Tomato 1kg pureed  

Fresh Tomatoes 500gm   

Olive Oil 90ml  

Bay Leaf 3kg  

Fresh Celery 35gm chopped  

Fresh Basil Leaves 25gms   

Fresh Oregano 10gms  

Garlic 60gms chopped  

Onion 100gms chopped  

Sugar 20gms  

Salt 15gms  

Method: -  

Making Dough: -  

1. In a dough machine bowl put refined flour (sieved) salt and fresh yeast, attached hook attachment and star combining the mix gradually adding water to the mix on low speed, add olive oil with the speed increased to medium for 7 min or until smooth elastic dough. Scrape add the dough out from the hook also and place the dough in lightly oil steel bowl.   

2. For those who don’t have dough machine can knead the dough with hand until a smooth dough is made. 

3. Cut the dough into 200gm portion size and keep them in flour dusted Steel pan and cover it with a kitchen towel or plastic wrap in a warm area until double in size. You can refrigerate if not using the same day.  

Making Sauce: -  

1. In a heavy bottom sauce pot put olive oil adding bay leaf, garlic, onion, celery and stir until translucent, add the roughly chopped tomatoes and canned tomatoes (Puree) into the sauce pot and while cooking stir gradually reduce the sauce until desired consistency required adding salt, sugar and the herbs.  

Assembling Pizza: -    

1. Pre heat the oven for 250-degree Celsius, take the pizza dough and make flat base using hand method or with a rolling pin, Spread the pizza sauce all around the except the edge of the crust adding mozzarella cheese topped with Goan Chorizo (Pan Cooked), Grilled bacon and all the topping in the recipe, then place the pizza with the help of pizza bat into the oven and cooked for 6 min or until cooked. Remove the cooked pizza and cut it into 8 equal slices and then serve. 

IBC Garden Pizza

Ingredients: -  

Pizza Dough 200gm  

Pizza Sauce 120gm  

Cheese Mozzarella Shredded 70gms  

Cheese Yellow Cheddar 60gms  

Asparagus 70gms  

Broccoli 50gms  

Fresh Basil 5gms  

Fresh Oregano 5gms  

Bell Pepper 50gm  

Salt 2gms  

Black Pepper 2gms  

Olive Oil 10ml  

Method: -  

1. Pre heat the oven for 250-degree Celsius, take the pizza dough and make flat base using hand method or with a rolling pin, Spread the pizza sauce all around the except the edge of the crust adding mozzarella cheese. Add  

2. Asparagus and broccoli (both blanched) and all the topping in the recipe, finally topped with yellow cheddar. then place the pizza with the help of pizza bat into the oven and cooked for 6 min or until cooked.  

3. Removed the cooked pizza cut it into 8 equal slices and then serve. 

Bang Bang Chicken, leeks, scallions and chilli  

Ingredients: -  

Pizza Dough 200gms  

Pizza Sauce 120gms  

Chicken Leg Boneless 150gms  

Sweet Chilli Sauce 40gms  

Siracha Sauce 40gms  

Soy Sauce 20gms  

Leek Fresh 20gms  

Chilli Red Fresh 10gms  

Spring Onion 10gms  

Cheese Mozzarella Shredded 125gms  

Olive oil 10ml  

Salt 2gms  

Black Pepper 2gms 

Method:-

Making Bang Bang Chicken: -  

1. Sauté garlic and onion until translucent add diced Chicken Legs cooked till moist add Sweet Chilli Sauce, Siracha Sauce and Soya Sauce and reduce until chicken is cooked and coated in sauce.  

Assembling Pizza: -    

1. Preheat the oven to 250-degree Celsius, take the pizza dough and make a flat base using the hand method or with a rolling pin, Spread the pizza sauce all around except the edge of the crust adding mozzarella cheese topped with cooked Bang Bang Chicken, chilli red fresh, leek. Then place the pizza with the help of pizza bat into the oven and cook for 6 minutes or until cooked  

2. Remove the cooked pizza and garnish with spring onion and cut it into 8 equal slices and then serve.
