The day was officially acknowledged in the United States in 1984 when then-President Ronald Reagan announced July as National Ice Cream Month. Over the years, the day has grown into a global experience for die-hard dessert lovers. While many people celebrate the day with their favourite

scoop like chocolate, vanilla, or mango, there is yet another side to this beloved frozen dessert world that is far more luxurious. Around the world, chefs and luxury dessert makers have changed ice cream into a luxury that is reserved for special events, made by using ingredients that are as rare as they are costly. 

These desserts are not just about fulfilling the craving for a sweet tooth, but they are made to elevate the culinary experiences that use exceptional ingredients, careful artskills, and exclusivity. Here are five of the world's most expensive ice creams and what actually makes each one of them worth its stunning price tag.

Absurdity Sundae, New York, Around USD 60,000 (Approx. INR 51 lakh)

Made for an exclusive culinary experience, the Absurdity Sundae is not just about having a single scoop, but more about the overall personalised luxury. The dessert features handcrafted ice cream, which is made by mixing Madagascar vanilla (considered the best vanilla in the world), a variety of premium chocolates, seasonal fruits, and gourmet toppings. 

Fine wines, rare liqueurs, and garnishes make the overall experience more elegant. The price of the ice cream is an outcome of a customised experience and personal assistance that turns this sundae into an experience rather than any other dessert.

Frozen Haute Chocolate, New York, Around USD 25,000 (Approx. INR 21 lakh)

Prepared by New York's Serendipity 3, the Frozen Haute chocolate is one of the most talked-about luxury frozen treats worldwide. This elegant preparation features a rich combination of 28 premium cocoas, which include several of the world's rarest types, along with edible 23-karat gold mixed into it. The ice cream is topped with whipped cream and edible gold, and also served in a goblet that is lined with gold. 

The display of ice cream has a diamond-studded gold bracelet and gold silverware that guests can take with them after having the ice cream, making up a considerable part of its cost. From the lavish serving experience to the blend of rare ingredients, it's never just the dessert alone, but a thing to cherish, even after the last bite.

Byakuya, Japan, Around USD 6,700 (Approx. INR 5.6 lakh) Per Serving

Japanese brand Cellato made a Guinness World Record for making Byakuya, the most identified as the most costly ice cream. Its premium price is derived from the use of exceptionally rare ingredients, including white truffle, that are sourced from Alba in Italy, which itself costs thousands of dollars per kilogram. 

The dessert also has Parmigiano Reggiano (an aged Italian cheese grown for at least 24 months and loved for its rich umami flavour), sake lees (the nutrient-rich fermented rice solids that are left after sake production) and a silky white truffle oil. This lavish ice cream is served with a handmade metal spoon created by Kyoto artisans, which adds to the overall luxury. Every element is precisely balanced to make a savoury-sweet taste profile which sets it apart from other traditional ice creams.

Golden Opulence Sundae, New York, Around USD 1,000 (Approx. INR 85,000)

Also made by Serendipity 3, the Golden Opulence sundae has evolved as synonymous with luxury desserts. It is prepared by blending Tahitian vanilla bean ice cream (known for its floral fragrance and fruity notes, making it one of the most premium vanilla varieties) with Madagascar vanilla, rare chocolates, candied fruits from Paris, gold-coated almonds, and edible 23-karat gold leaf. 

The ice cream is topped with gold-dusted sugar flowers and is served in a Baccarat crystal goblet. Although it is comparatively less pricey than some other creations, its thoughtfully sourced premium ingredients and splendid presentation prevail to make it one of the most high-end ice cream desserts.

Mauboussin Mega Sundae, Dubai, Around USD 1,000 (Approx. INR 85,000)

Prepared in a collaboration between well-known luxury jeweller Mauboussin and Scoopi Café of Dubai, this sundae delivers luxury in every bite. This subdea is prepared by blending Madagascar vanilla bean ice cream (well-known for its rich and sweet taste), premium saffron, black truffles (a rare fungus loved for its earthy fragrance and exceptional culinary usage), artisanal chocolates, and sheets of 24-karat edible gold leaf. 

Served in a bowl that is inspired by fine jewellery, the dessert reflects Dubai's distinction for its grand culinary affairs.
