World Environment Day: Explore The World Of Plant-Based Boiled Egg

With the pandemic teaching us to look at our backyard and showing us the importance of greens along with relying on green waste, this has also helped to turn our kitchen into a sustainable one. The chunk of mindful consumers are now seeing a all new realisation of the side effects that the animal-based diets have and this has seen a paradigm shift in the consumption pattern. Along with the fact those who believe in this whole idea of plant-based food, they think that the plant-based movement is all about doing what is better for the planet and its people.

On this World Environment Day it’s time to ensure that we  look for various avenues to lead a better life and in their own little way contribute to saving the environment. People today are extremely conscious about their life choices be it the way they dress or the food they consume and its impacts on the environment. The plant-based industry is at a nexus of climate change, cruelty free attitude towards animals and healthy-eating and is gaining momentum at a lightning-fast pace globally.  

Here are two exclusive recipes that will change your notion how to consume eggs.

English Muffins

Preparation Time: 10 minutes , Cooking Time: 10 minutes

Serves: 2 

Ingredients 

    150 ml EVO Liquid 

    2 tbsp plant milk, optional (can use any) 

    Salt to taste 

    Pepper powder to taste 

    2-3 tomato slices 

    2-3 onion slices 

    Spring onion greens, chopped, for garnish 

    Oil, for cooking 

    2 English muffin buns 

Process 

1.    In a bowl add EVO Liquid along with salt, pepper & milk. Beat well using a fork. 

2.    Slice the tomatoes & onion, set aside till in use. 

3.    Slice the English muffin buns and slightly toast them on a pan. Set aside till in use.

4.    Heat oil in a pan, pour the evo liquid in it. Allow to cook for 30-40 seconds & begin to scramble. 

5.    Once it completely scrambles, remove from flame & mix in some chopped spring onion greens. 

6.    Fill this scramble inside the English muffin buns & top with a slice of onion & tomato each, finish of with some more spring onion & cover with the other muffin bun. 

7.    Serve hot. 

Tikka Masala 

Preparation Time: 15 minutes Cooking Time: 20 minutes

Serves: 2 

Ingredients 

Tikka Masala Spice Mix 

    2-3 green cardamoms 

    1 bay leaf 

    3-4 Kashmiri red chilli, whole 

    1-inch cinnamon stick

    8-10 black peppercorns 

    1 tsp cumin seeds 

    3-4 cloves 

EVO Marination

    ¼ cup cashew cream 

    1 tbsp kasuri methi 

    1 tbsp ginger garlic paste

    ½ tbsp oil 

    1 tsp prepared spice mix

For the Gravy

    1 medium-sized onion, roughly chopped 

    2 medium-sized tomatoes, roughly chopped 

    8-10 cashews 

    8-10 garlic cloves 

    1-inch ginger, roughly chopped 

    1 tbsp Kasuri methi 

    2-3 green chillies 

    1 cup brown onions paste

    Salt to taste 

    1 tsp coriander powder 

    1 tsp garam masala 

    Prepared spice mix

    Marinated EVO 

    A handful of coriander leaves 

Process

1.    To prepare the spice mix, add all the ingredients in a pan and dry roast till they become fragrant. 

2.    Allow these spices to cool down at room temperature and grind them into a fine powder. Set aside till in use. 

3.    Now prepare the marinade, add all the ingredients to a bowl & mix well. Add in the EVO Boiled Egg White cubes and mix well. Refrigerate for 20-30 minutes. 

4.    Meanwhile, prepare the gravy by adding onions, tomatoes, cashew, garlic & ginger in a kadhai along with kasuri methi and green chillies, roast till the tomatoes become mushy. 

5.    Allow the cooked vegetables to cool at room temperature and blend into a smooth paste. 

6.    Transfer this paste back to the pan along with 1 cup water & bring to a boil. 

7.    Add in brown onions paste, salt, coriander powder, prepared spice mix & cook for 3–4 minutes. 

8.    Add marinated EVO and cook for another 4-5 minutes on medium heat. 

9.    Add in garam masala, mix well and cook for 1-2 minutes. 

10.    Finish with a handful of coriander leaves & serve with choice of accompaniment. 

Chefs Tip: You can also cook the vegetables & whole spices together with water until everything boils and blend it into a smooth puree if you are pressed at time.
