Want Some Authentic Wazwan? Try Kolkata's First Kashmiri Diner

Dawat-E-Kashmir in New Town serves some of the most sought-after Kashmiri dishes including Wazwan, which is essentially a course-based meal featuring several dishes like Nadru Yakhni (lotus stem cooked in a yoghurt-based gravy), Waza Panner (creamy cottage cheese dish), Haakh (Kashmiri greens), tabak maaz (fried lamb ribs marinated in yogurt and spices), yakhni (mutton or chicken in a yoghurt and spice gravy) etc.

In Kashmiri cuisine, Wazwan essentially denotes a feast; ‘Waza’ literally means cook and ‘Wan’ means shop and the word ‘Wazwan’ refers to setting up a feast in the host’s courtyard. If you’ve sampled Wazwan in Kashmir, you know how hearty and indulgent it can be. The diner also lines up quite a few authentic Kashmiri entrees and kebabs cooked by Kashmiri chefs. You’ll also find a host of rich meatball dishes like the rista, which is gushtaba and rista which are essentially meatballs cooked in yoghurt or tomato gravy and aren’t easily available in the city. 

Don’t forget to check out some authentic Kashmiri Kahwa tea. This aromatic tea blends green tea leaves with a medley of spices, including cardamom and cinnamon, and is the perfect drink for the monsoon. Garnished with almonds and saffron, Kahwa tea can be a real treat!
