Making these gravies a part of meal prep will allow you to prepare delicious food at the drop of a hat. It will also make it easy for you to cook during weekdays when your hands are swamped with balancing work and personal life.
Dahi Gravy
Preparing yoghurt curries is the easiest. You can even begin your cooking sessions by learning to cook these tangy gravies which pair quite well with potatoes, taro roots, okra, lamb, chicken, fish, and more. The fresh gravy needs ginger, turmeric, cumin, and yoghurt. To make it spicy, you can add red chilli powder, coriander powder, spice blends, and fresh herbs as well. Yoghurt curry takes less time to prepare, and if you make it without onion or garlic, its shelf life remains long.
Shahi Gravy
Shahi refers to the royal. This gravy has got the name because of the rich and expensive ingredients used to prepare it like cashews, saffron, almonds, black pepper, and more. You prepare a rich paste of onions, tomatoes, and roast spices, and top it with yoghurt, blended nuts, and cream. Freeze the gravy and use as much as needed to prepare shahi paneer, malai kofta, chicken korma, stuffed vegetables, etc.

Bhuna Masala
Bhuna masala gravy is the easiest and most versatile to work with. It can be used with cottage cheese, vegetables, and various meats. Saute onion, garlic, tomatoes, ginger, and spices in a pan. Once the gravy releases the oil, you can store it in the freezer. It is perfect for preparing aloo gobi, chicken curry, chole, paneer masala, matar paneer, rajma, and more.
Coconut Gravy
Coconut gravies are nutritious, creamy, and soulful. The list of ingredients to make this curry includes curry leaves, grated coconut, tamarind pulp (or kokum), mustard seeds, coconut milk, and a few spices. Makhani
Makhani or butter gravies are sinful indulgences that leave you in a food coma. The base is prepared using tomatoes, cashews, butter, fenugreek leaves, spice blends, and fresh cream. Rogan Josh Gravy
Inspired by Kashmiri cuisine, you can also meal prep for rogan josh gravy in advance. The key ingredients of the recipe are Kashmiri red chilli powder, yoghurt, whole spices, brown onions, and a few powdered spices. This is the gravy that gives flavour to slowly-cooked lamb and chicken. You can also cook vegetables, paneer, and tofu in it.
Green Masala Gravy
For the green hue in the gravy, the start ingredients are coriander leaves, spinach, mint leaves, and saag of varieties. A creamy base of onion, garlic, tomatoes, and ginger is prepared. It is topped with pureed leaves and powdered spices. It is perfect for palak paneer, vegetable hariyali, fish masala, and hariyali chicken. Add tempering of mustard seeds and red chillies with a garnish of fresh cream before serving.
