Vegetable Cutlet: The Perfect Companion For Your Evening Tea

Crispy outside, and soft inside, vegetable cutlet is a healthy as well as a tasty meal option. It is one of the popular breakfast dishes or evening snacks, loaded with vegetables and spices. They are also considered a delicious party snack and are considered a good option to serve to regular day-to-day guests.

The delicious and easy-to-prepare dish is originally found in French cuisine and the word cutlet was first used in the year 1682. It comes from the French word, côtelette. The dish is popular worldwide and is served in many restaurants.

Instead of adding a lot of vegetables, cutlets can also be prepared using a single vegetable as well. You can make a potato cutlet or beetroot cutlet. Also, cutlets can be prepared using chicken instead of vegetables. 

To attract kids to this healthy and yummy dish, vegetable cutlets are prepared in various attractive and appealing shapes such as heart, circle, ball and triangle. Also, you can use rava instead of breadcrumbs for the coating of these cutlets. They are usually served with ketchup, chilli sauce or mint chutney in restaurants or homes. It’s a perfect snack which can be served with a cup of coffee or tea. 

Here’s the recipe for vegetable cutlet.

Ingredients:

  • ½ cup chopped carrot
  • ½ cup chopped beans
  • ½ cup chopped beetroot
  • ¼ cup green peas
  • ½ cup potato
  • ½ cup breadcrumbs
  • 2 tbsp cornflour
  • 2 tsp chopped green chillies
  • 1 tsp chopped ginger
  • 1 tsp salt
  • ½ tsp cumin powder
  • 1 tsp red chilli powder
  • ½ tsp garam masala
  • ½ tsp amchur powder
  • 2 tbsp coriander leaves
  • 2 tbsp oil

Method:

  • Take a cooker and put all the vegetables like carrot, beans, beetroot, peas, and potatoes in it. Then, pressure cook them without adding water.
  • If there’s any water in the vegetables, drain it out. Once done, mash all the cooked vegetables nicely. 
  • Now, put breadcrumbs, cornflour, green chillies, and ginger.
  • Next, put all the spice powders such as red chilli powder, salt, garam masala, amchur powder, cumin powder as per your taste, followed by coriander leaves. 
  • Mix them to make a stiff dough. If needed, add more bread crumbs to make the dough stiffer.
  • Then, form a shape of these cutlets as per your choice and then coat them with fine rave or breadcrumbs one by one. 
  • Fry them in oil until they turn golden brown.
  • Delicious vegetable cutlets are ready to serve.

Points to remember:

  • You can also add the vegetables of your choice like cauliflower and cabbage, while making the vegetable cutlets.
  • Ensure that all the water is drained out from the vegetables before mashing them. Do not use water to cook vegetables. 
  • Adding breadcrumbs is an important step as it combines all the vegetables.
  • Don’t miss this step. If you put the cutlet in the oil without coating it with breadcrumbs, it will break into pieces and will become very oily. 
  • If needed, you can add some more breadcrumbs or rava.
  • To make the vegetable cutlets healthier, you can also air-fry them instead of deep-frying.
