Ingredients

For the cashew cream cheese

120 gm cashews, soaked overnight in water

1 to 2 tsp olive oil

¼ to ½ tsp lemon juice

Water as needed

Salt to taste

For the assembly 

½ cucumber, cut into rounds

20 gm mixed herbs (you can choose from parsley leaves, celery leaves, and stalks, basil leaves)

Salt and Pepper to taste

Ciabatta or milk bread slices

Olive oil to drizzle

Here’s how you can make the cashew cheese sandwich
  1. Prepare the cashew cheese by adding all ingredients except the water to your blender.
  2. Add a tiny amount of water, only if required. Blend it to a creamy consistency.
  3. For assembly, liberally apply cashew cheese to a slice of bread.
  4. Top with cucumber rounds, salt, pepper and fresh herbs.
  5. Drizzle some more olive oil and serve.
