Veg Sandwich Fillings To Prepare Lip-Smacking Meals

A simple sandwich is a wholesome meal. If made to perfection, it comprises fibre, carbohydrates, protein, and aromatics. Each bite is juicy and crunchy making it irresistible for you to wait to finish a bite before reaching for the second. All the flavours of a sandwich are in its filling. If you make a juicy filling like Chef Chetna Makan shows in her ‘Between the Slices’ series, there is no easier recipe for wholesome indulgence than a sandwich.

People often restrict themselves to the recipes they have memorised and forget to experiment with the ingredients. For many vegetables, a sandwich filling is either raw veggies tossed in mayonnaise or layered with a spicy spread. While these help you prepare a sandwich in less than 10 minutes, a small effort can transform a boring bite into a delicious one. Below are some of the interesting stuffings you can try making next time you are in the mood to dig into a sandwich.

Creamy Corn And Cheese Filling

There is nothing creamier than corn kernels tossed in butter sauce and cheese. This filling will remind you of Italian recipes. Simply toss sweet corn with melted butter, a teaspoon of all-purpose flour, half a glass of milk, and chopped capsicum. You can add a few tablespoons of water if the milk starts thickening. Once you are happy with the consistency, add grated cheese, salt, pepper, paprika powder, and oregano. Make sure the stuffing is thick so you can add it on top of the crunchy lettuce, kept on a toasted bread slice.

Aloo Chana Chaat Filling

You can add a tweak to your aloo stuffing for the sandwich by introducing boiled chana to it. Mash the ingredients together along with chopped onions, green chillies, coriander leaves, tamarind chutney, and green chutney. You can add lemon juice or curd for tanginess. Spread a thick layer of this mixture on white bread slices, top them with another slice, and grill in the Usha’s sandwich maker greased with butter. In 5 minutes, you will have crispy brown sandwiches ready to be devoured.

Paneer Bhurji Filling

Paneer bhurji is more than a pairing with paratha. It can be stuffed between two slices of bread to create a drool-worthy sandwich. Every bite brings a burst of flavour and crumbly texture to your mouth, leaving your taste buds surprised. You can adjust the level of spiciness to your liking, but ensure the consistency is thick so it does not make the bread soggy. To keep the sandwich crunchy, grill the slices in a sandwich maker, or use long loaf bread and grill it after stuffing and greasing the surface with garlic butter.

Mushroom And Spinach Filling

Mushroom adds the meaty texture and spinach adds iron to a sandwich. Combine them both to have a delicious stuffing. Saute sliced mushrooms with olive oil, garlic, herbs, and onions. When the mushrooms are done, add chopped spinach and sauté it for two minutes. One grilled bread slice, add fresh greens, a layer of mushrooms and spinach stuffing, a few drops of chilli oil, and thinly sliced tomatoes and cucumber for juiciness.

Bombay Potato Masala Filling

Make the potato filling in the Bombay style. Saute onion, garlic, ginger, green chillies, and mustard seeds in a pan. Add a pinch of turmeric powder and garam masala before dropping the mashed potatoes. Drizzle lemon juice and sprinkle coriander leaves to finish it. Add this filling to bread greased with butter. Slide the sandwich into a sandwich maker and grill until the crust is crispy. Enjoy it with sauce or green chutney.
